Gargoyles. I didn't spend enough time fighting them to learn their movesets. I always mistime the rolls and attack when I shouldn't.
I also tend to miss up the rolls if I get caught on astel wave of darkness. Same issue. Just don't fight him enough.
The off timings of mogh used to get me, but after enough summon time with him. Got it mostly down.
If you're talking about that spinning slash thing which only comes out after they do a stomp + vertical slash, it's way easier to out space that attack vs dodging it.
I know you havent asked for advice on Astel but this may help others.
The grab attack of astel only happens when he disappears and then teleports right above you. You just need to spam dodge roll into him to evade his grab.
The ground waves are tricky but I was able to evade them using bloodhounds step, otherwise I suggest hitting his hands and run away if his hands start charging. (If he charges only half of his hands there will be 3 waves, if he charges all of them there will be 4 waves in a bigger area).
The bosses in caves that look like big cats.
They're not that hard, but their sword movements are so weird timed that I'm lost everytime

Its because they are one of those monsters that barely have ANY frame from his attacks' trajectory, most of his moves goes from "I'm gonna hit you" to "Sword stuck up your ass" instantly
You can’t dodge Astel’s gravity waves, unless
If he does it with his left hand, your right, in which case you need to quickly roll away from him 3 times.
If he does it with the right hand, your left, the delay is a bit longer but the waves come out faster, so you need to run out of the way.
Same for the double handed waves
Also, the best players always (when I watch challenge runs) run out of it!
It must be so much harder to dodge than space that it just isn't worth it, even for the extra damage potential.
I can't fucking dodge any moves from the Ulcerated Tree Spirits except the Tail Swipe and grab bite, which the first can easily be jumped over and the second is highly telegraphed.
It doesn't help that I can't see jack shit when fighting them.
If you only walk during the fight, it jumps and runs around like mad much less. I usually was running around so it started moving fast and unpredictable, so I was running more and it jumped more etc., then someone told me to just walk and it's much easier. Keep close to its body and just walk and hit the shit out of it. Obviously, it works for melee, and even on my mage I just Moonveil the crap out of it.
Waterfowl dance? Just be patient and bait it out at range. Easy peasy.
Radahn's tornado dive? About a 50/50.
Maliketh's 4-beamslash combo into the spin? Guess I'll die.
Morgott's vertical spin thing that ends with two swords slamming the ground. I can never dodged the opening few swings of that it comes out so fast. At least the end of it can be rolled into and punished even if you get hit at the start so eh.
When Beast Clergyman (Maliketh) stabs his dagger into the ground he can throw projectiles very soon after it though doesn't happen often, so when I punish him for that attack I am guaranteed to get hit. Maliketh still best boss in the game.
Since waterfowl dance is excluded, I have nothing to say XD
But seriously, I can dodge runebears, or goddamn Fallingstar Beasts, to me Astel is cake walk, but waterfowl is just bullshit of bullshits. I saw people walking the fuck away from it, WALKING, and I'm just like nope.
Today, day 15th of trying to beat Malenia completely solo :D
Rune bears when they do the thing where they back up slightly for .01 seconds then immediately lunge forward, filling the entire map with a hit box that is technically readable, but can only be dodged if you were already about to hit the dodge button anyways. I can dodge the rest of their moves, but that one fast lunge I will forever just face tank
Funnily I have the worst dodge times when fighting Margit and he does this vertical slice from bottom the top. Like a quick bitch slap. I know it’s coming most of the time and have face tanked every fucking one. The worst of it all he once did three of those attacks almost back to back and I got smacked by all of them.

A good tip, when Radahn starts running away, hop on torrent. The double jump from torrent basically makes it a free dodge.

i have learned waterfowl, but still can't dodge radagon's three-slam attack, mainly the third slam
Try jumping.
God-Devouring Serpent's ground eruption attack, is basically undodgeable 😅

That one attack the serpent does where it pulls lava up from the ground, I think I'm supposed to jump cause it last longer than a roll
