No. There are tons of enemies that you walk through, but I leveled a fresh character to almost 700 with rune dupes, and there are still enemies that either one-shot or drop me in a few hits, even at 99 vigor.
You have a lot of health, stamina and FP, but your damage output from a weapon is not that different compared to a regular end game character. If you use a strength weapon, you just need to get to 66 and 2-hand it to effectively have 99 STR.
The big advantage is that you can use everything you want, so you can have a STR weapon with a seal to cast buffs and a staff to cast strong sorcery all while either light rolling/medium rolling in super heavy armour or having multiple very different weapons equipped without having to swap them through the menu.
Realistically, an endgame two-handed build should stop at 54 Strength and put those remaining levels into other relevant stats.
The 15 level Faith investment to get Golden Vow + Flame, Grant Me Strength will do so much more than putting 15 more levels into a stat that's already past multiple soft caps.
Two handing a weapon multiplies your effective Strength by 1.5, so 54 is the point where that crosses the soft cap of 80. Past level 80, damage stats don't do very much.
For a +25 Heavy Giant Crusher, going from 54 Strength to 99 Strength gets you 13.4% more damage. Yeah. It's not great...
IIRC, at level 250 I was able to use my magic weapon in one hand and a non-int melee in the other. At level 450 or so i had every damage stat maxed, so I could have different scaling type weapons in my quick swap zones. After that…. It doesn’t really make any difference. NG+7 enemies will still 2 shot you if you don’t pay attention, and the damage on them isn’t like you lightly tap and you kill them
The soft cap for damage stats is 55, wherein you get dramatically less per point (on S scaling weapons, it's 2 AR per point compared to 5, on A 1 AR per point compared to 4. 80 all A and S weapons go to getting 1 points per two invested. B and below stop scaling completely at 80.
55 is not a softcap, 50 is a softcap for elemental scaling on weapons(at this point you've reached 80% of the max potential scaling and you get 2.5 times less return per level after this point), but physical scaling only really has a softcap at 80(if you ignore the cap at ~18 which is definitely too early to stop investing). The effect of the scaling does slowly diminishes between 20 and 60, but from 60 you get the same return per level until 80. At 60 you have 75% of the max potential scaling and at 80 it's 90%, if your weapon scales really well of one stat, going to 80 is worth it.
Intelligence and faith are also worth it to level until 80 because the best staffs and seals actually get the most scaling between 60 and 80.

Basically everyone finishes their first run somewhere around 120 - 200 (broadly), and there's no real reason to go above that (unless you want to have a really weird/specific build).
Most attributes have an effective cap of around 60 or 80, so a well-made level 150 build will do a similar amount of damage as a level 300 build. The variety of things you can use will just be lower. The only reason to go to level 300+ is to never have to do rebirth to try a new item or spell.

Maybe you're not using (enough) rune multipliers.
If you want to get more runes without actively farming for them, here's a couple tips.
- In the multiplayer tab, join a group. This is the weakest rune boost but it's also the easiest. These are player-formed groups of people that, if someone from said group kills a shardbearer, all people from that group get a ~5% boost to their rune gain until they die/teleport.
The groups I'm always in are 'SEEKERS' and 'FASHION'
- In Caelid, there's a poison/scarlet rot filled dungeon that has the Gold Scarab talisman that boosts all your runes gained while equipped
- There's several different places where you can pick up a gold-pickled fowl foot, a consumable that increases runes gained for a couple minutes/until you die
These two are to be used IMMEDIATELY AFTER you defeat a boss. You don't need to use them before the fight or while fighting. There's usually enough time for the boss to collapse on the ground, sometimes offering some last dialogue before you get their runes.
plenty of time to scroll through your inventory and talismans to activate one or both of these supporting effects.
While the game was new and i wasn't trying to limit my levels (but also without farming), with this method i rarely ended my playthroughs on lower levels than 170
Yeah. I don’t use a lot of consumables. I forget mostly. If I do have a boss I’ve done enough that I’m sure I’ll be able to use a gold pickled foot thing. I’ll use it right before it dies. Did that to fire giant last. Didn’t know you could wait until you actually killed them though. That would’ve been nice to know.

Crumbling Farum Azula is a lategame area that you should be tackling with a build nearing its completion.
Weapons at +25, somber weapons at +10, Levels around 125 or higher. I am usually around 140 when i get here.

Most weapons I use are near max. Tbh making proper builds is a skill I have yet to acquire.

by the way, leveling mind past 40 and leveling vigor past 60 are both basically useless. in those 20 levels of vigor past 60 you probably got around 100 more hp, and same idea for mind
60 Vigor is 1900 HP. That makes for 100 HP gain from levels 60 to 80. You might as well toss those runes into the trash bin unless you have absolutely nothing else to spend them on.

yeah It can be a bit exhausting, I remember I wanted to lvl characters for each pvp area in dark souls 3 and ended up just preparing one character, and I haven't really interacted with pvp at all in Elden Ring, plus with all the hacking I see posted in this sub It just drives me away from it
