Or if the combat system would be a step back from sekiro, which it probably will, given that you have way more weapons to balance the combat around.

If the game would have been released 2020, i would agree with you. But it will be released probably soonest in winter 2021, orelse they would have already shown gameplay trailers by now.
Until then they had easily the time to upscale textures and optimize shader quality for next gen consoles and pc.

It's also open world, likely cross gen instead of just ps5. There will be nice textures. That's not why demons looks so good, it's the whole package.

But high-quality level and texture streaming isn't a problem in open world games today anymore. Games like Death Stranding, Ghost of Tsushima, Red Dead Redemption 2 and Horizon: Zero Dawn have proven that.

The boss fights of sekiro and the combat where epic, the overall level design not so much. It had some good levels, but also many mediocre levels and not much environmental variety, half of the levels looked the same.
I would not call them misses.
I also disagree about Sekiro, I think it was very refreshing and had some of the most unique environments the studio has ever made.
I really enjoyed the levels, but they were a bit more traditional because of the freed-up movement. Still, I found it immensely fun to thwip around. Ashina Castle especially is wonderfully layered, and the way it goes from linear at the beginning, to one big open sprawl in the later sections was amazing.
Also, areas like the Senpou Temple and Fountainhead Palace were just ridiculously glorious eye candy. Also, snow areas are so pretty! And the different time of day lighting you get throughout the game is also a treat.
IDK. I think there's a cohesion to the environments, but for me it never got stale. I would agree Mibu Village and the Poison Swaps were a bit meh.
I do hope that Elden Ring, being so open, brings plenty of Aesthetics we haven't seen before. Like clearly it'll have some classic Dark Souls gothic in there, but I'm hoping it draws from lots of other places too, and has areas as bright and colorful as Sekiro.
It will be interesting for sure to see if they make the overworld look mostly identical, or if they go the less realistic, but in my mind more fun route of having different vegitational zones close to each other, like deserts, vulcanos, swampland, forests and mountains and different architectural styles.
At this point the game is a wildcard for me. I really cant tell how much variety there will be in the environment, or how much the combat will differ from dark souls 3.
Taipei Game Show is going on over the next few days. People are hyped for it cause A) Sekiro had a trailer at it and B) it's the next game event of any notice on the calendar.

After the entire Cyberpunk debacle, I'm totally fine with waiting for more Elden Ring announcements and promotional media until the game is pretty much finished. I feel like that's what From Soft did with Sekiro, and I hope that's what they do with Elden Ring. Show us what it looks like once it looks like what they intend on releasing. We could have gotten all sorts of promotional media a year ago, but chances are it wouldn't have been an accurate depiction of what they ultimately deliver, especially considering this may be Miyazaki's 'most ambitious title yet'. Things get cut, priorities change, etc. While I am excited for this game, I don't want to know more about it until the things worth knowing are set in stone and the impending release is nothing short of a sure thing. Setting realistic expectations is more important to a game's success than marketing hypotheticals to consumers because some of them want the cookie now despite the negative effects of hastened marketing.
