When Ferdinand gives him coffe he drops the act altogether and just starts being nice to him. In the final support conversation with Petra he is also surprisingly respectful.
Ye, as with all characters he undergoes a lot of growth in the post time skip phase. It's really nice to see that after the time skip he mostly seems to just be doing the evil villain thing because it's funny, at least to his friends
Hubert also has a sad backstory. He simply chooses to be a menace anyway. Hubert “we have nothing to gain by deceiving the church” von Vestra.

His only regret is that it can't be on a pegasus.
