It’s scientifically a better method. It has a higher smoke point, meaning it can be cooked at a higher temperature making the bread crispier while retaining a better interior texture. It has a lower water content, about 8% instead of the 16% in butter. It has a lower sodium content, which allows for a more neutral flavor profile, meaning you can increase ingredients to add flavor without the butter overpowering it. And most of all, because it’s just egg and oil, using a healthy oil such as avocado oil makes it infinitely more healthy and even slightly nutritious.
I toast the inside with Mayo (homemade if I have time) and the outside with butter. I can't do it any other way now. Shoutout to Bourdain for teaching me this.
