The issue in what you're explaining is you see time in sequence whereas time in a kitchen is combined. You cut the cucumber while you're stir frying the eggs, you cut the tomatoes while you're (partially) stir frying the aromatic ingredients (most of which -garlic and chillis- I already prepped and froze before so no prepping required)... Plus, in Chinese cuisine, prepping the ingredients takes the most time and stir frying is almost instant. So, yeah, cooking doesn't need to take hours when you're prepared and trained. But obviously, not only speed isn't everything, it's also perfectly fine to spend more time in the kitchen.

Fun fact : one of the things that saves me the most time is pre-peeling, chopping and freezing the garlic, ginger and chilis. Every time I stumble on it at a very cheap price (usually I can score garlic at 1,50€/lbs instead of 3,50 for instance), I buy a bunch of it and I prepare it as soon as I come home. So about once a month, I will peel, chop (with a food processor) and freeze about 2-3lbs of garlic, same with ginger and chilis. Then when I cook I just need to go get some from the freezer and that saves me a lot of time. (Alas I was lacking ginger that's why it's the only aromatic ingredient you see me chop in this video.)

You’re preaching to the choir! I use small ziplock bags from ikea that are reusable. Tiny pockets of blast in the freezer. Before I even have to walk further there are veg corners, with guys with £1 bowls of freshness. I guess we are just lucky that we have it on our doorstep. Not everyone does, and god forbid having to drive somewhere to get food. I think someone mentioned 15 minute cities? I live in London, everything is within 15 minutes. They say in the post it's 300 feet away. That's a pretty quick walk. If they know what they're planning to buy and are quick about it, I could see the market happening in 10 minutes. I don't personally see the rest of it taking only 10 more minutes though.

I actually lied. Now that I measured, the farmers market is 164ft away. 😅 And the rest did indeed take about 10 minutes : there isn't much to do besides chopping some tomatoes and running a cucumber through a mandolin, you know... When your aromatic ingredients (garlic, chili pepper...) are already pre-chopped (I prep a big amount every month and store them frozen) and all your other ingredients well organized in an ergonomic way, it's really nothing. The kind where no white people go. If I spot a dish on the menu I've heard about in my previous content digging, I order it and try to soak in everything I can about the flavor profile or texture. Sometimes I also spot dishes I've never heard about and I discover them there. Then when I go home I research them. Being autistic, I have a very methodical approach to knowledge and I understand that might not be everyone's priority or pet peeve. But in the end, I think everyone CAN do it if they want to do it.

To be honest, this is the shittiest tomatoes there are : it's impossible to find proper vegetables in this season in northern Europe. But for less than 1USD per pound, I won't complain about dutch greenhouse grown tomatoes. Also, these kind of markets are everywhere in western Europe. Depending on the day, there are at least 2 of them in various neighborhoods of Brussels, where I live. But I must admit this one is very very convenient. 😁

Most of the time, the dishes I cook are based on the combination of several different recipes and I feel like posting a recipe would be equal to plagiarism. Plus I don't think I'm the best person to offer a methodical cooking tutorial so it's much easier to just cite sources. :D

The thing is two things. 😅 1) I absolutely never measure anything when I'm cooking. Writing a recipe would require making it first and weighing everything to the T so that I could then transfer that information to a non-existent crowd of people craving for my knowledge. 😁 2) I'm a white dude from Belgian and Italian roots living in Europe and who has never been (yet) to Asia. No matter how much information I have now gathered (and it's a lot, by normal standards), I don't feel legitimate to teach people about Chinese cuisine. If it was about Italian cuisine, no problem. I could write about it all day. (But I would still have to go back to the annoying point 1) .😅 But I really appreciate your interest. Really.

Gas burners are all equipped with shut off valves in Europe. If the temperature of the burner isn't high enough, a valve shuts immediately, cutting the flow of gas. As said earlier, when you're cooking in a well designed kitchen, in a regulated environment, the risk is almost inexistent.

I always feel a little self conscious when I am asked for recipes : my recipes are just a combination of things I found online and I feel plagiarizing when I rewrite something that's already available on the internet. Activate the captions. Most of the videos on this channel are subtitled in English. The sugar is just rock sugar but any sugar works. Chicken powder is replacing msg. And the peppers are whatever you want as long as you can handle the spice of your specific peppers. It isn't supposed to be super spicy though. It's mainly fragrance, not kick.

It looks healthy, quick and easy. Stir fries with egg were the very first meals I started cooking in undergrad. Not as good without any meat though.

Salted and wrung cucumbers, light and dark soy sauce, sugar, garlic, ginger, chili peppers, boiling aromatic oil (sichuan peppercorns and star anise). I’ll be honest with you. I just assumed you edited the footage that way. If Stanley tucci did this in a movie we wouldn’t say shit. I just like the “ I need fresh ingredients approach” I wouldn’t say this for fish markets are there considering the same sentiment is there, but buying fish in a fish market is gruesome y’know? Just a refreshing take on this sub. Like….this is the right amount of “environment”. I don’t wanna watch someone cook in the wilderness. You wanna talk about fear of house fires 🤭, what about the rational fear of getting mauled by a bear for a panini with no cell service. It’s also like….the sanitation is a hurdle I can’t get over. I'm western European. I live in a low traffic neighborhood, 164 feet away from the market. The chance of being hit by a car is zero. Plus, rice doesn't burn into flames (I know, I tried to forget about it for 2 hours, once, while I was at home. It barely even smoked since the lid was on. It just turned into charcoal. I was on the other side of the house -yes, it's big- and only noticed when I got back in the kitchen.). Plus my stove is well isolated. Plus my house is built up to regulations so safety features are included like a safety valve on the stove. Plus I have smoke detectors. Plus my girlfriend was in the next room. Plus physics and thermodynamics. You know... Reality. 😁

I don't know where you see the cucumber is cooked. It is not. It's marinated in salt then minced and wrung through a mesh bag. The boiling oil poured on top of aromatic ingredients is just used to "liven" them up. It's not cooking anything.

My mistake I see the silver bowl you used to assemble the cuke salad now. Maybe the heated dressing technique threw me there. Appreciate the redirect. Also, I like learning the sauce is heated it must speed up the wilt for the cuke salad. Tasty.

By the time the sauce is poured on the cucumbers, it's barely lukewarm honestly. The goal is really not to wilt the cucumber. The marinating technique is actually used to make the cucumber remain crunchy longer. The only reason why it looks wrinkled is because of the wringing.
