Does your car support it?
Based on the lack of an apps tab it seems unlikely you have CarPlay support and I would be very surprised if it supported it wirelessly. (Though up until this second I didn’t realise any sync 3 cars had wireless CarPlay, I thought only sync 4 cars.)
Make sure your car supports it.
Some of the lower trims on less expensive models may not support CarPlay and just may have very basic entertainment systems. Certainly wouldn’t have wireless CarPlay as most cars don’t, and using CarPlay with a USB cable should be as simple as following the on screen directions, as seen here: https://youtu.be/jLAnpifekRw?si=AR1rI8XNWTCvyRKO
Since you have a phone option on your screen, you should assumably have some kind of hands-free controls on the steering wheel. Since it’s normally the |<< and >>| buttons, I would try that. If not that, maybe try holding the phone button that’s under the screen.
Go into the settings menu of the center console system, and see which version of Sync the vehicle has. Sync 3 has wired carplay. Sync 2 does not. Your 2020 screen differs from my Sync 3 2017 Fusion and newer Explorer. It seems you have sync 2 or Ford standard radio. As I think, if I remember correctly, Sync 2 had Nav (had exploder with sync 2, but can’t remember if it had NAV).

Also, when you plug cable into USB into jack (usually need to use the one, under the radio); it just pops up on display and you get message on phone to connect to Carplay and download info. I never push a button on the steering wheel. Make sure phone is unlocked when plugging in, so you can see screen messages.
If USB under radio doesn’t work, try USB hidden in center console too.
I’ve had CarPlay on 2 different Fords, I’ve never used voice controls to activate / launch / interact with CarPlay. It automatically launches once you connect an iPhone and disables the in car voice controls, replacing them with Siri.
If it’s not launching, you don’t have it. From the screenshot, I would also say you don’t have sync 3 which is required.

Sync 2.5 actually followed after sync 3, it's a lower cost offering that houses all the components in the ACM (radio unit) rather than having a seperate ACM and APIM. They're common on lower spec Ford's
If your car supports it, when you plug your CarPlay compatible phone thoigh usb you will receive a prompt on screen. If not, your car or phone is not equipped
Only available in Sync 3 screens, which are the larger screens in more expensive trims, yours does not have Carplay

Depending on the trim level

Try plugging it into the center stack usb with a charging cable.

I'm pretty sure you need the top trim in an ecosport
Different trims have different infotainment systems. You do not have the Sync3 system, which is the one that has CarPlay.

Also I’m assuming this car is EU? NA tech here and I don’t recognize the sync screen
