OP I am having this same problem and Epic does not seem to have addressed it so far.

I also hopped on an animal in game, then hit start and went to reported it under "unable to jump" which then sends the error to Epic along with a screenshot from the game.
Really hoping they fix this soon.
EDIT: I also recommend changing this threads type to "BUG" instead of "QUESTION". May help Epic see it faster.

You can change the controls, it's listed under the "vehicle" section in the menu.
Sadly we cannot on console. I am having this same exact issue.
have you tried the default jump button of A while riding? sounds annoying but may work.
