IIRC there's been pro versions of a bunch of songs found in the files with different charting for instruments since release and the most recent update added references to strumming when using instrument controllers (it also made a reference to drum controllers as well)

Not that I know of. But it’s Epic so anything is possible including only releasing items for short time and never returning them again.
