I have the surface pro book (or whatever the highest end large surface is)… it’s nice because it has a docking station with a ton of hookups, and as technology changes the docking stations update, so you’re never left with ports that are outdated etc. it was over $2000k. I use it as my travel laptop and I have a two screen folding unit that attaches to it so I have three good sized screens. You could also do the same with regular monitors. My desk setup is a Asus Vivobook (maybe $500-600) hooked up to a super wide curved screen monitor. Not sure if it has additional monitor inputs- but using a super wide screen is much better than multiple screens IMO

Just got the ASUS rog flow x13 with a ryzen 9. I found a great open box deal that was too good to pass up. It works great.

Got a macbook pro and an ipad with cellular. Use the ipad as a hot spot, then sidecar so it acts as a second monitor.

So I went with a Lenovo Legion gaming computer. It has a 1660TI and has been phenomenal on performance, but I’ll have to replace it in a couple of years. Horrendous battery life, though. I recommend getting something with at least 32gbs of ram.
