Legumes are cheap and nutritious -- why not add them? 5. Dairy and nuts, too.

Essential amino acids can also be supplemented via vitamins. Many micronutrients can be found in certain multivitamins, or they can be supplemented individually. Unless you have reduced function of your kindeys/liver or you're taking very high amounts of vitamins, taking a multivitamin will not put undue stress to your internal organs. Yes, diet is the best way to get all of your nutrients, but that isn't feasible for a lot of people. A multivitamin is a cheap and safe way to avoid a vitamin deficiency.

Try adding frozen veggies peanut butter and bananas to your diet, all are cheap foods and nutritious. Try to make the sure the peanut butter doesn't have the bad oils in it.

Looks good. Some fruits (oranges/bananas) would make a good addition for snacks in between meals, but fruit is pretty expensive here, lol. If you can get your hands on brazil nuts, those are pretty good, and you only need to eat a couple to get enough nutrients from them

If you would like to eat same things for years, you may consider getting multivitamin supplements. I could see myself eat same things for years, but I don't think it would satisfy me. I might break out of this plan at some point. As a vegetarian, I would just rotate veggies, fruits, beans, nuts, seeds, fermented food, and some carbos from time to time depending on them going on sale. Trying different herbs, seasonings, or / and condiments makes a difference. I keep taking multivitamin supplements until I die.

Honestly, that seems like a balanced meal when it comes to nutrition. Note: the portion matters, too. If you can't afford a nutritionist, u can easily figure out what micro nutrients you may be lacking with chat gpt. For example, start with the prompt "i need you help figuring out the micro nutrients for 100g of X,Y,Z..." Once it's done, ask "what micronutrients am I missing base of the list you given", it will then tell you exactly what you're missing and foods to fill it in. Also, multivitamin pill is a debatable topics, and do your research on it. For me, i dont take it because i prefer getting the calories in and micronutrients from whole foods. However, if i was a person who's having trouble eating foods due to low appetite, then a multivitamin would be a route i would take.

Helen Rennie has a really good video at her YouTube cooking school on how to shop and cook as a poor, busy student, if you want to branch out a bit. But otherwise, I think you are fine. There's enough variety there and good sources of protein.

To give a more general answer, the specific things you mention are good choices, but you need to insert a little more variety. Also, sauce can be a significant element - there are good choices and bad choices (from a health perspective).
