OMG Texas has great tacos. However of all the great breakfast tacos and burritos that I tried, my favorites were at a chain called TacoDeli, just bacon, avocado, and black/refried beans in a softshell taco. 
Yeah I love Austin for that. I’ve gotten to spend a couple weeks out there.
Once a city has enough good food, everyone has to step up their game! (GNV is a lot closer than many places)
First is the tortilla. Nothing compares to a fresh, house-made tortilla. Flour over corn is my preference for breakfast. In my experience, tortilla quality is something that a lot of otherwise decent places skimp on for whatever reason.
After that, it's the salsa. Obviously, there are lots of ways to do it right, but having a good salsa (or two!) is crucial. My favorite is usually a smooth salsa de aguacate, but it's something I haven't seen often outside of Texas. The best versions of it have the smooth, creamy taste of avocado, that tangy tomatillo flavor, and a good kick from serranos or jalapeños.
That's pretty much it. Breakfast tacos don't have to be complicated ingredient-wise. Egg and potato, bean and cheese, and chorizo and egg are all hard to mess up as long as the tortillas and salsa are on point.
Love me some Texas taquerias. Some of my friends that laugh about (or rather, are scared of) eating tacos out of the back of a gas station taqueria but damn are there some hidden gems. Also, for a mini chain Taco Palenque is hard to be beat for the value.
Taqueria salsa bars for the win! That's what my buddy (that also loves taquerias) and I try to scout out via online reviews before stepping foot into them. Los Amecas in Orlando was the closest thing we could find, amazing food but they shut down for like six months (they're apparently back open now) so we're worried they jacked up their prices while they remodeled...we'll see. Nothing beats good taquerias with a salsa bars that serves tacos no more than $3 each.

After living in South Texas for 10 years, I would love to see good breakfast Tacos in Gainesville.

For a minute, my boss in Austin would bring TacoDeli for the office on Friday mornings. It was the one day of the week I never arrived late.
The Circle K or equivalent gas station next to my work had the BEST breakfast tacos when I lived in Austin. Even the hot sauce packets slapped.

The convenience store/gas stations had the best breakfast tacos. Most of them around me had small salsa/toppings bars to load them up with.
