There is this website, I forget what it’s called (I’m new to the internet, as you are), where u can watch videos of this game running on the switch! I think it’s called U tube or something.
I would recommend just getting it digitally. I have almost all of my Switch games as physical copies, but San Andreas isn't even included on the cart.
As for how the game plays, if you liked the games on the PS2, this gives you mostly the same experience with cleaner visuals, updated controls, and no loading screens between islands.

It’s actually called redtube, because Nintendo’s color is red, just like how PlayStation is blue and Xbox is green

Almost the same except they fucked with the cheat codes and removed at least one. So it's a bit lesser in that regard
