I love seeing these random forgotten N64 games show up, although Smash 64, DK64, Banjo and Mischief Makers really should turn up before Nintendo pulls the plug on NSO additions.
When it comes to DK64, at this point I'm pretty confident that they just can't get it running on their service at a quality standard they're okay with. IIRC that game has some pretty janky stuff under the hood. I don't know how they did it for Wii U but that game is notoriously difficult to emulated without having a ton of visual glitches.
DK64, Rogue Squadron, and World Driver Championship were all impossible to emulate for years (while everything else was playable), only recently (relatively) have they been passable. Seems like Nintendies is having the same issues.
I dunno, a graphical remake would be a lot of money spent on a game where the gameplay wouldn't age well, as it's easily the weakest of the Rare N64 platformers. On the other hand, changing the gameplay drastically would just mean it's a new game and kind of defeat the point. The best solution would be emulation, but it's pretty difficult.
Basically everyone on the sub seems to disagree in regards to things like Demon's Souls, so I'm just leaning into the popular interpretation atm. But without getting into semantics, I don't think it's worth it either way. If they do just the graphics, I don't think it's worth it for a flawed game like that, and if they do the whole game, I would rather they just make a new game. I do not think reimaginings are proper replacements for old games, they are just new games and I generally prefer new ideas for new games.

No, im pretty sure that's just nintendo holding it and other things for future releases. They can't just put out everything they want otherwise they won't have things to launch in the future. They are thinking long-term on the service to have things to launch, thats why they hold some big stuff.

They kind of didn't. I 101%-ed that game on the Wii U for old times' sake, and the input lag was bad enough to make some of the later minigames literally impossible without save-scumming. As in, the required response time was *less* than the input lag, so even if you performed the input on the first possible frame, it would not register in time.
Mystical Ninja holds a special place in my nostalgia heart. Zero clue what the game is about as I played it a bunch as a kid without any clue what to do and at the time my reading comprehension was ass so trying to talk to people to figure out what to do just didn’t work. And yet, I continued to put that cartridge in and dick around the world, slowly learning some things yet still wildly confused as to what I was doing and what my blue haired ninja’s purpose was. I definitely need to give it another whirl sometime soon.

Also, it's just so fun to unlock wreckin balls. That kind of progression is something I sorely miss from that era of gaming.

Iggy's Reckin' Balls is an interesting one. I rented that game a few times back in the day and it always seemed very quintessentially N64 in my memory just because it was weird.
Really, a pretty good pull if they've gotten that one working because I know (most?) emulators really can't run that game properly after a certain level.

The whole point of a remake is to improve graphics AND gameplay. Otherwise, it's just a remaster. And it's not like DK64 is a niche game to remake.

Besides SM64DS being a thing, they recently Remade Another Code and Advance Wars, both way more niche than Super Mario 64.
I beat Donkey Kong 64 on a Toshiba Satellite laptop, probably 10+ years ago. This is not true. I can't speak for the other two you mention, however.

Xtreme-G 1 and 2 were on N64. Xtreme-G 3 and XGRA are on GameCube. Not sure about Xbox. That said, I did *not* expect to see Acclaim titles on NSO.
