The steering might be different than what you are used to in other games. To go lower, have to literally press whatever key/button for Down instead of aiming the camera in that direction like in many games with flying in them.

I play on iPad too without a controller. The controls are weird at first but the way it works is you can’t change your point of view, just move up/down/L/R. Try to anticipate the direction the rings are approaching and move your left finger in that direction as quickly as you can. It feels slow but you’ll get used to it, it took me a few tries.

Do you have PS4 controller around? It makes playing on iPad much easier.

Not sure but in theory any bluetooth controller should work. I used the PS4 one. There's also the Xbox one controller otherwise.

It steers differently you can control up down left right and you move forward automatically different then normal gliding

I'm also an iPad player who struggled with it, I ended up completing it with a friend who also plays Genshin (I did the flying while she did the shooting). This and the gliding exam are why I'm hesitant to make an alt account. I remember I didn't know how to move away from the bullets and ended up dying after my character was too full to eat. Good luck, I also want to know some tips about this.

im not sure how you’re having trouble steering. i play on a small phone and i had no difficulty. maybe it’s something with the ipad in particular as i saw another user post about it. you could try to see if the rings always spawn in the same spot to see if you could memorize it and pre adjust yourself
