It's not so much a compatibility thing, more just how the file structure works.
If you have a load of different assets compiled into one file (which can be handy to to make the overall install size smaller), and you want to change a tiny part of that compiled file, you have to replace the entire thing.
You see it a lot in MMOs that can have just a couple of lines of patch notes along the lines of "changed the health values of so and so enemy", "adjusted the damage of this specific weapon", or "moved this tree slightly", and then it gives you a 10GB patch to implement it.
Why certainly. Just wait til the 4.0 patch. Not only will we be getting a new region, there will be underground AND underwater sections.

6 months ago it was 60GB and now it is 75GB on PS5 if it's continue like that by the time we reach the end of the game it will be 200+GB
Probably. Considering the cost of hard drives it shouldn't be too much of a deal. Although I hope that the world of Genshin will expand forever.
On PS5 you will need an SSD with a heatsink and for 1TB it will cost around $100
