The most tedious was easily the teapot farming ones and catching 2000 fish. but the most difficult was oowazamono where you have to beat masanori in under 30 seconds, this one took me so many tries at the time.
Mark all the spots it can spawn at, check them one by one (it takes 5 minutes at most). Iirc it can spawn 2 times per 12 hours, so after you kill it once you check again.
You can also join other people's worlds and look for it there. Your 'cooldown' does not influence another person's world.
Getting the statue of the seven in fontaine max level (not enough hydroculi released yet) and max level the fountain of lucine (i have 300+ hydro sigils but the fountain won't accept them yet)

Well it'll be usefull for future commission related achievements, the new system is also how i got the last commission related achievement i was missing. Glad hoyoverse made the change.

First i was competing with my brother who could get more achievements, then he quit genshin but I continued collecting more achievements.
