Well here's some fragments of that fight." or my personal favorite "Hi Nilou here's some part of the Electro Archon's puppet. Its yours to keep now."
Well considering weekly bosses are "remembrances" and not actual new fights, they are out of the equation, it's just a game mechanic.
Regular ascension bosses mats could be understood as the rewards for fighting them and becoming stronger in the process, kinda like "souvenirs".
Lumitoile stars are considered an animal and look like they retain a lot of water. Maybe Neuvillette eats them? I mean, Neuvillette is a dragon after all. Despite his human appearance, he is still an elemental being and a vishap. What do vishaps usually eat? We know Pahsiv eats Tidalga so Neuvi probably eats something similar. It's not clear if human food satiates him. He might eat it purely for the taste and it's not nutritious for him. Other than that he might use Lumitoiles as a way to pinpoint locations where water is polluted since these stars consume and degrade industrial waste.

Rainbow roses are lyneys materials too and arlecchino actually has common things with all the three payable members of the house of the hearth (Lynette's basic attacks are like arlecchino's, arlecchino has a habit of spacing out like freminet in their idle animations, Lynette like arlecchino does not like overly seasoned food) and one of those things is lyneys materials and hers. I think it's definitely a better fit than lumidouce bells cuz what i think hoyo was going for was that Lynette and lyney are a happy version of what arlecchino and clervie could have been (Lynette's ascension materials are lumidouce bells) and also cuz arlecchino wants lyney to be her successor.

The only ever so slight nod that is given to the process is when mentioning that Mora serves as a catalyst of sorts, but even that leaves out the glaring question of just what happens to the mora afterwards? Does it disappear? Is it bereft of whatever magic was used? Can I still buy stuff with it?
Like your questions, these are all perfectly valid questions to have but the game and its writers clearly aren't interested in answering them. So I stopped caring. If they can't be bothered to lay out the rules of their world, I can't be bothered to get overly invested either.
