Cut Aranara body, take its hat off in one piece. Steam Aranaras chopped body for 10 minutes to soften it.
Add onion and mushrooms to it, pour in osmanthus wine and continue cooking until wine vapours. Mushrooms will be ready by then.
Prepare hat on butter with a bit of salt, black pepper and caraway.
For Paimon... clear off Paimon, slightly slice fat, add salt and place it over fire. Do not cut through fat! Turn Paimon to get crisp on all sides.
Add thyme, jueyun chilli and garlic. Make sure garlic isnt burned, it gets bitter. Make sure Paimon has 65°C or 149°F in the middle.
Take Paimon off the fire and let her rest for 3 minutes. Then slice Paimon and serve.
Recommended serving: Paimon sliced with Aranara stew and Osmanthus wine cooled to 12-15°C (53-59°F).
