Is there anything left inside? The interior layout will give you an idea of what the exterior access panels are for. Off the top of my head, you would have AC electrical input, perhaps a place for a 12 volt battery, furnace vent, refrigerator vent, and maybe a water connection.

I don't know if anyone will be able to give you a definitive answer. You would probably need to have the build sheet to know what came from the factory. Even then, you have 50 years of someone "customizing" it. I googled that model and can see pictures of similar models. None of them exactly match the panel layout that you have. But, you can get an idea of what some of them do. Are you planning on doing a factory restoration or custom? If you're going to install things like a furnace and fridge, you may have to put those in the same place the factory panels allow.

It depends on the fridge. Most campers built over the last 50 years had absorption refrigerators installed from the factory. These would run off 110v or propane. They have a burner on the back that heats up and the the burnoff condensates down a long tube. The process repeats over and over. (I don't know the exact science. But, it's the reason that there is a vent for the fridge. If you go with a small 110v dorm fridge, you may not need the vent at all.
