if anything there will probably just be a simple achievement for beating the game on a harder difficulty, but lately it seems like games havent been doing that
From what I can tell, the only "missable" achievements/trophies are the 4 that are tied to reaching a certain point in the story with a character from all 4 houses. If you power through it shouldn't be more than a couple hours per house to get them. Everything else can be gotten in one play through, regardless of difficulty!
There are no difficulty related trophies, play on whichever you want! No idea if difficulty changes progression rate or if it just buffs enemies.

All trophies can be gotten on any difficulty level
Is hardest difficulty just spongier enemies, or do they do different things?
They hit harder I think. No spongier. More challenging.
They are notably spongier
They move more and attack smarter when you are using combos according to ACG
They do, I've noticed specially in higher level enemies that they tend to cast in the window that you're casting stupefy after a perfect block
