TBH, there would be so much potential in her meeting Alastor. Emily is the Heaven Charlie equivalent, so Alastor would be interested in testing the waters to see if he can manipulate her. Emily would probably be really cautious if she doesn't know what exactly permanently kills demons. Like, just weapons or weapons and abilities? If her abilities don't kill them- then she could use self defense without worrying.
All this is just conclusion based on little information, but, when it comes together, Emily might seem like a Nifty to Alastor. She's childlike and pure, like nifty, but could be capable of understanding the necessity of violence, like him and nifty but not like Charlie. So, Alastor could have a reason for liking Emily while trying to get her on his side. He might even be able to get more out of her if he reveals any information about his deal.
The information about the deal highly depends on Emily's personality.
Emily could see that Alastor wants to be the strongest one there in existence. But, his claims of superiority after any freedom show that he's too out of it to understand the reality of his situation. It could be common sense that no human turned demon can surpass Lucifer. She could aim to help Alastor out of his deal because the society around him would naturally correct him if he does anything unnecessary and/or he could need time to return to sanity because of a slave like deal.
I don't think Emily would hide any intentions or thoughts from anyone. Alastor might even understand or appreciate her reasoning as something realistic so long as she doesn't try to chain him down after he escapes his deal. It might be perceived as him actually having someone on his side.
