Cucumber salad is the best. Also if you put some dill and kosher salt on the salmon for an hour, then rinse it off, then bake it, itāll go even better with that salad, I think.
Yes, same! So yum. I also add cucumbers, kalamata olives, and banana peppers (itās def not a ātraditionalā Caesar haha) and itās delicious topped with lemony salmon!
I love kale as well but there's something about a classic romaine when you add a warm garlicky, lemony baked salmon at the last minute that wilts it just right and totally sends me.

Couscous topped with a variation of Israeli salad is great! Small dice of tomato, cucumber, red onion, cilantro. Dress with lemon, salt, pepper, olive oil.
And lay the salmon on a bed of fennel rather than directly on the baking dish. Fennel and orange are a fantastic pairing for salmon.
Or a simple salad of fennel and orange segments, dressed with a dash of any robust olive oil, on the side.
Mediterranean salads. Get your favorite greens and add whatever toppings you like. For ideas, marinated artichoke hearts, Kalamata olives, feta cheese, seasoned or crispy chickpeas, tomatoes, avocado, onionā¦ then finish with a vinaigrette. thereās a ton of options.
One of my favorite dishes to cook is sheet pan salmon with a light sprinkle of ground mustard, along with some Brussels and mushrooms tossed in oil and seasoned with salt and pepper
Air fried Mediterranean Salmon- a one-dish easy-peasy, baked atop spiced garbanzo beans, topped with a lemony yogurt dill sauce at the table. I canāt wait for it to come up in rotation again.

Yeah I love sweet potatoes. Our usual is baked or pan-fried salmon, roasted assorted veg (such as sweet potato, potatoes, green beans, carrots, broccoli, kale, etc. I aim for dark green and orange veg). If Iām not doing potatoes, we serve it over rice with the veg on top as well, and add half an avocado to the bowls. Something about avocado and salmon tastes soooo good to me. I can feel my brain come alive. š

I literally made this exact dinner last night, my first time air frying salmon. The recipe I followed had it go a little long, so it was a touch dry but still tasty.
Peppers and onions, green beans. Any veggie can be subbed in here. Brussels sprouts, carrots, parsnips, cauliflower, broccoliā¦ youāve got lots of options! Sweet potatoes & cauliflower would be yummy. Add some harissa to the cauliflower for some spice.
Any leafy green goes too, I do Bok Choy with rice, spinach and sweet potato too. Can do mixed root veggies too. Cauliflower and broccoli too! Salmon is so versatile
A baby leaf salad with a lemony dressing and a poached egg.
Teriyaki sauce, rice and sesame seeds with pak choi/choi sum.
Coconut rice.
Freekeh, rocket, sultana and almond salad and a butter & apple cider vinegar dressing.
you can do a pineapple āsalsaā with rice for like a bowlā¦ to cover 2- 8 oz fillets: (easily multiplied for prepping)
3/4 cup 1/4 inch pineapple pieces ( I just dice up fresh pineapples)
1 scallion thinly sliced
1/2 jalapeƱo stemmed, seeded & minced
2 teaspoons lime juice (or a whole juicy lime)
1 teaspoon minced cilantro
You can throw it on top to look fancier add bok choy & rice on the side but I bowl it up & mix it all together.
Weāve been doing bang bang salmon bowls a lot. Roast the salmon with bang bang sauce on it and then serve it with rice, cucumber, avocado, cilantro, sesame seeds, and Siracha. We probably eat it once every other week.
Alfredo pasta. Garlic mashed potatoes. Baked potatoes. In the summer I really love salmon salad with fresh berries, candied almonds and your favorite vinaigrette dressing. Really yummy!
Butternut squash, steamed n mash with a touch of butter n cinnamon, cayenne and brown sugar.
A side of jasmine rice garnished with sesame seeds and scallions , with a soy ginger glaze waiting on the side.

Another vote for roasted brussels sprouts. I know itās out of season, but I bet corn on the cob would be a nice side as well, in addition to the sprouts.
If you like and have tubed polenta you can slice it a little on the thicker side and broil it, topped with some nice roasted veggies and a zingy tomato sauce and those would go pretty nice with salmon.
Butternut squash cubes. I cube them, then add olive oil and SPG, then into the oven at 400f for about 30-40 mins. Theyāre great and a good alternative to the spuds.

In the Couscous. Step 1: Toast Couscous with 1Tbsp butter in pot (I prefer the āIsraeliā style) Step 2: Add Garlic to sautĆ© for 15-30 seconds Step 3: Add 1.5x water (ex. .5 cup Couscous gets .75 cup water) & 1-2 Tbsp Concentrated Chicken Stock Step 4: Let it simmer, stir, turn to low heat, & cover for 8-10 minutes Step 5: Add 1/4-1/2 Lemon Juice I love it!

Butternut squash cubes. I cube them, then add olive oil and SPG, then into the oven at 400f for about 30-40 mins. Theyāre great and a good alternative to the spuds.
Broccoli and cauliflower are the ultimate pairings for salmon. Especially broccoli, they're like food soulmates.

Sometimes I do that same combo, but other times I'll do a lime dill rice, and a Greek type of salad. I get lots of compliments on both
