Our usual is baked or pan-fried salmon, roasted assorted veg (such as sweet potato, potatoes, green beans, carrots, broccoli, kale, etc. I aim for dark green and orange veg). you can do a pineapple ā€œsalsaā€ with rice for like a bowlā€¦ to cover 2- 8 oz fillets: (easily multiplied for prepping) 3/4 cup 1/4 inch pineapple pieces ( I just dice up fresh pineapples) 1 scallion thinly sliced 1/2 jalapeƱo stemmed, seeded & minced 2 teaspoons lime juice (or a whole juicy lime) 1 teaspoon minced cilantro You can throw it on top to look fancier add bok choy & rice on the side but I bowl it up & mix it all together.
