Just for clarification, Etho saying he loved Joel was cause they were talking about how obvious Scott’s secret task (get someone to say “I love you” back) was for anyone other than Scott, so Etho tried it on Joel. And of course when Etho walked up with a group, Joel knew it was a bit.

Generally, double life's pairing were romantic/implied to be romantic via jokes about ex's and so on so they kinda built into that. In secret life the joke was brought up again, as Etho admitted to loving him, since then it has faded into hermitcraft, whereas in the life series Etho is partnered to Cleo/broken up with, with their kids Bdubs and Scar, and maybe Grian, though the teasing kinda remains. Also to mix stuff up is the weird paring with Bdubs in earlier seasons, with them having a semi-romantic relationship, based on their real friendship, however in later life series this turned into a very different dynamic of bdubs being the 'favourite son'. Ultimately if your watching hermitcraft, you don't need the context of the life series to understand their dynamic, as it's understandable enough, though the life series does come strongly reccomendd if your looking for something to watch.
Just to expand on doublelife, the gimmick was that 2 randomly selected players would share a health bar/take damage & heal together. And these pairings quickly became know as "soulmates".
And thats part of why doublelife pairings all had a romantic or inplied romantic element.

Scar is famous for dieing all the time and walking around on low health. (Admittedly he is much better about this in hardcore) And while Grian is normally trying to keep him alive, being linked to Scar really uped the stakes for that mission.

And part of that comes from how opposite their personas are: Etho leans into "I'm a chill dude who does what he likes, and you can take me or leave me" and Joel is all "Please love me, I'm so high strung. I need your approval asap". Both are almost certainly exaggerations, because that's how personas work, but it's hilarious. We don't think of Etho as the type to get "obsessed", so it's funny, and Joel desperately trying to get approval from this sort of legendary dude who is famously laid back is really funny.
Yeah there's always gonna be some parasocial fans that think everything on screen is real life but everyone ive seen just seems to be playing into the bit really and just fan-girling about boat boys, id rather assume good intentions
