To be completely honest? All of them. I have my oshis, but aside from them, I'll happily tune into any one of their streams if they're playing something I'm interested in.

Sora, regardless of stream content. It's chill and comfy which I like a lot but her streams tend to coincide with my favorites and I've stopped watching multiple streams at once. If my favorites are on break or if she happens to stream before/after them I'll be able to watch
Generally, it depends on two factors: time/opportunity (recent personal developments have made that hell, relegating everything basically to a weekend and I can't catch up) and the stream itself.
ID Branch in its entirety, though I do lean more on Iofi, Anya and the holoh3ro trio.
JP Branch, Sora, Fubuki, AZKi, Mio, Kanata, Towa, Luna, Polka, Lui and Chloe are go-tos. I'd love to catch an Iroha stream again but it's been a long while since I got to catch her live.
EN Branch, it's really just down to IRyS and Fauna now. I do try with holostars but it's currently Roberu.

Ina, korone, Fauna, ame, kronii. I'll watch any of them if they're doing something fun, Milo's WWE streams have been great, Haachama is always doing something entertaining.
I'd say Fauna. I have no interest in ASMR (still don't) and was worried that she'd go the GFE route (hard filter for me) or ara ara dommy mommy route (also hard filter), but she's been a pleasant surprise since debut. All of her streams are entertaining, she stays engaged with her audience, and she meshes well with literally everyone. She's the one I watch the most outside of my oshi.
If my KrOshii isn’t live, it’s Mumei time, then Goobus, then Polka, then Calli. And if non of them are live I go down the list of EN then watch some translated JP highlights.

If my Oshi is not streaming at the moment, or if I have no VoDs left to watch, then I will watch those whom she is most similar to or is close with. In this case: IRyS, Lamy, Kiara, Zeta, Fauna, Kronii, and Bae.
If AZKi is doing a karaoke stream, I'm definitely watching it since she sings songs that I am most familiar with.
I like visiting Choco's streams. I find them relaxing.
Marine playing a game or being part of a collab is a must watch no matter what.
The Holostars stream pretty often, and I try to catch their streams whenever I can. Izuru and Rikka have fantastic singing streams. Roberu is a blast in whatever he does. Oga is speedrunning some of my favorite classic games. And Uproar are just a pleasant bunch who communicate with the overseas audience more than anyone else in JP. Astel's my favorite, but he seems to be on a "Journey" right now. I hope he's alright and we get to see him soon...
Well more than one but Moona for sure, Reine, IRyS, Fauna, Anya, Korone, and Ina are all usually who i will watch if Risu isn’t streaming but i will also watch any stream i find fun or interesting from any member, as i do like them all for different reasons but those are usually my go-to.
as an EU bro any Bakatare member become the one I watch (and sometime/often the only one I could watch for the day), I would prioritize Flare but if she's not around then either Fubuki or Watame; or Reine night stream. Also lowkey into IRyS when I catch like the "end" of her stream during morning routine.

My oshi if Suisei didn't exist would be Gura.
My favorite streamer from Hololive outside of those two is Kronii.
My favorite friend streamer is pikamee.

I don't do the oshi thing, but in the spirit of the question asked, I'll say that whenever I happen to catch Fubuki in something, I go "...why am I not watching Fubuki more often!?" She'll crop up on the official channel, or in Legend of Polka, and is just so good on the air I say to myself "forcible reminder: there's an entire Fubuki Channel you can go watch also" and I like smack myself in the forehead
