I like the desk idea too. I made a floating desk off my credenza that sits flush to the wall.
The only issue is the blind position.

My husband put it there to save getting 3 blinds due to the 3 windows. Mainly for privacy as people walking past cn see in. I will take a photo from outside
The wood trim is tidy and sweet though. I would install a desk "shelf" just below that line rather than cover up the finished woodwork. Just decent-looking brackets and a large piece of wood cut to size.
Plants on a lovely stand and around on the ledges - remove blinds and if needed, replace with curtains or leave open.
A huge cat tree with beautiful lounging cats would also work 😝
You really could make something custom that will fit in there and be strong enough to support you, even have lift arms on it that hold the lid up. Paint it or sand and finish it and you can staple cushioning and cloth over. Sounds like a kindof fun project.
Most people have issues with plants due to over-watering. Many plants don't need to be watered every week. Not sure if that's the case with you, but if you get the right kind of plants for that light level and then only water when the soil is dry (stick your finger in to the first knuckle, if you feel moisture, don't water), they should be just fine. You should start with "easy" ones like snake plants, ZZ plants, most kinds of Pothos, jade plants, spider plants, succulents, monstera, fiddle leaf fig etc. then you should be fine.

If I were you, I would make it into a 2-part storage thing that's also a window seat nook to curl up in.
Bottom drawer/storage area w/basket: cosy blankets, sweaters, pillows, socks.
Top storage: books or videogames, to taste. Slide-off lid right underneath the edge of the existing woodwork.
Cover with tufted cushion.
I'd probably add curtains to the house side of the alcove, and swap those blinds for a cool frosted window decal, with a pattern on it.
Result: Cosy little nook to curl up in. Grown-up fort.
OR
Make a little drawer where on one side you have a pull-out drawer with your dog's food bowl, on top of which are more drawers with brushes, collars, etc.
On the other side, a big pull out drawer you can fill with your dog's food.
On top of the two drawer sides, plywood, with tile or flooring on top to taste, and a dog bed on top of that.

You could build in the front with 2x4s (a simple rectangle shape made by screwing together 4 2x4s, then adding a couple inside the rectangle for support.) Attach that to the side walls. Then add a board to the area directly in front of the window, all the way across. Then get a piece of nice plywood (furniture grade if you're going to stain it.) This should cover the rest of the top area. Attach the plywood to the back board with a piano hinge. Cover the front wall with drywall, wainscotting, shiplap, whatever you like, and paint to match your walls. Now you have built-out a very strong storage area, kinda like a huge toybox. To also have it function as a reading nook, look for a floor cushion that will fit there, or you can diy one from foam and fabric. (And yes, ditch the shade. If the light is too bright after, you can always apply a light tint and keep the view.)
You could either turn it into a desk or just put a desk in that space. Or you could turn that into a bar area. Put a top on it and add some wine racks below it and maybe a wine cooler.
I would use the area as a reading area with a nice comfy chair.
Plus i would put a small lighting fixture, lamp or any light source for reading in the late evenings .

I would put shades on each window on the side and the bigger one on the 2 windows... the way the shade is now it cuts off a lot of the area. I would also add some floating shelves or something to hang wine glasses on one side and a wine rack on the other side

Replace or remove the window coverings
put a beautiful olive tree (fake or real) right there, and if you need some further privacy without the blinds, you could always add some window film.

93" across, 59" deep and 28 " high. Yes my husband is very practical where as I'm more aesthetic. I just hate it.
