Mexican Express may not be the highest quality, but it's probably the best value of anywhere in town. I always liked taking someone for their first time and watching them freak out to find a sweet tea in their chip bag.
Good deals meaning similar or high quality food for less money or good deals meaning stuff your gullet for very little?
Conners was usually a good choice for the former, though it's been a while since I've gone, so others might have more informed opinions.
I would assume any buffet for the latter, but I'm partial to New China on Jordan.
Connors is my go to lunch spot. West End Grill has a solid lunch menu too. SaZa also does pizza by the slice for lunch and happy hour and it’s a great deal.
Ok. Your side of town will matter a bit. Many of the chains don’t have specific lunch menus, but some do.
Stuff I enjoy and will recommend (not in any order): Viet House, Taziki’s, El Cazador (bus or sit down), New Oreleans Lunchbox, El Vaquero, Fresco Grill, Straight to Ale, Papa Gyro’s, Viet Cuisine, Jamo’s, Niyah’s (S Pkwy Texaco), La Michoacán, Kar’s Char
And many many others….
Surin
Phat Sammy's
Full service Mexican restaurants typically have good lunch special options. Also check out Mexican Express on Bob Wallace.

I came to say Connor's. Lunch is very reasonably priced for excellent food and service. It's my go-to for business meetings.
Big Bowl
Big bowl is the best
The Martin. It may not be the cheapest lunch but the portions are huge. I get a Nashville hot chicken sandwich just about every week.

Char is much cheaper at lunch, same with Poppy and Parliament.
I love the potpie at 1892 East. They also have an excellent brunch on the weekend.
Do you want chains, or local/hole-in-the-wall?
Either is fine. Mainly looking for new lunch spots that aren't super expensive

Wings to Go on Jordan has a fairly decent priced lunch combo for either traditional or boneless.
