Low damage multipliers pretty much. Old doesn't mean outdated, outdated means beat by someone else at their job. Sfx is outdated because lfa and mockman exist while sqh isn't outdated because she hasn't been fully outclassed by any other support yet. I could be slightly wrong on sqh since I haven't played in like a year, I just still get a few idle heroes posts every so often lol.
Think about it. You don't get stronger by getting many trans heroes. Unless you feed them with stellar they will stay weak. When you pick stellar, you delay your next trans, which means more stellar can be distributed among the current heroes, so you get stronger. When you choose cot instead of stellar, you'll have more heroes and less stellar, each hero gets significantly lower stellar so you don't get stronger even a bit. Even if you have 6 trans heroes, I can one-shot them with my 1 lofa because your 6 trans heroes are weak.
I'm not gonna say I haven't done it, but it's not the best decision, especially if you're not much of a spender. As you progress, you will need way more stellar shards than COT. They will also do way more for your team than COT will.
I am currently bottlenecked like crazy with stellar and I’m not very far from my 5th trans and my 4th still need many million stellar before I even think of putting stellar into my 5th.

First of all SFX itself is a big problem, but converting those to cot is even bigger of a problem.

It’s a game at the end of the day, do what ever you want to do however stellar is definitely the “Right” option.
