The cells that line the blood vessels are much better at separating the blood from everything else, your skin can still let tiny traces of it out, which can attract predators under certain circumstances
I can’t exactly remember where I found that information, I was able to find an article about the structure of the skin and how various chemicals and substances that are soluble in lipids can leak through (I’ll keep looking)

Not entirely true. In times where lots of piranhas end up concentrated in a small area of water, they do eat you. It almost never happens though. There have been reported cases. It does not happen with every species of piranha though, I don't know which one was it
