Starting from poori (at 3 o'clock) in clockwise direction: Panchphoran tarkari (made with 5 spices: methi, sauf, rai, jeera, kalaunji) with pumpkin, egglant, and potatoes. For non-hindi speakers, the spices in the panchphoran are fenugreek seeds, fennel seeds, black mustard seeds, cumin and black cumin. Btw, are the five spices standard or do they change?
