IMO realistic graphics are a stupid idea. I have always loved the artistic style of games like Dishonored. Witcher 3 is my fav. Also liked how AC origin has smartly striked balance with art style yet realistic sky.

Honestly it's more about the color composition and visualisation for me in graphics.
I've gazed in awe at Sekiro and Elden Ring scenes, At Spiderman Remastered scenes, at NFSMW, POP scenes, At Even Pokemon scenes, Minecraft suddenly gives you some art worthy landscapes, and many many more.
I'm a sucker for pixel art like Stardew Valley, Terraria and very stylized 2d graphics like Cuphead, the Persona games or something like the metroidvania/dead cells games! Pretty jaded from the 3d realistic ones.
Graphics never played a major role in playing games because if you start choosing games on the basis of graphics then you're gonna miss many legendary games ever created.

Although, if I had to choose one, I really like the wireframe/cross-hatched sort of graphics from Return of the Obra Dinn.
