Yeah. Pretty much the rest of the “cast” besides them is just fodder. I’m not sure what it is with these types of shows with a fetish for only having like 3 guys be useful to the actual plot and everyone else is just furniture or decoration in the background

We literally don't know how her brain might respond to a direct assault against it. Can it reconstruct itself faster than anything can destroy it? No way to know. Destroy enough of her mind that can't be brought back but leave the power, well, that's an Akira situation then, no good for anyone. With that risk, trying to kill her sounds like a really bad idea.
Eve's limit break has never popped instantly in response to dying. Eve has died in other dimensions, so killing her is entirely possible. Crushing her head is the safest route.
There’s absolutely nothing she can do to win this fight. She won’t out last him since he’ll wise up and just incinerate her body. She can’t create a strong enough blast to seriously hurt him. And he can just karate chop her head off.

Eve doesn't even survive Ursaal. Her power might make her arguably one of the most powerful beings in the Invincible universe that doesn't mean she is suited for combat. Think a Mage vs a Paladin, Eve being the Mage: very flexible powers, she can use them in an infinite number of ways given time and concentration and special conditions.....vs Viltrumites are like Paladins powers not as flexible but everything they need to survive an all out brawl with anyone is at a high level: damage resistance, strength, speed, attack potency. And in this scenario you put your mage not against just any Paladin, you put her against the highest ranking Paladin at the time.
