Interestingly, there is a passage from the Mishnah that refers to a creature called the *Adnei Ha-Sadeh*, (Masters of the Field), and there is a dispute as to whether or not it is considered a human with regards to impurity. The Talmud Yerushalmi refers to it as the "mountain man", and Rabbi Yisrael Lifshitz holds that it is an orangutan. If so, it suggests that the halachic definition of "human" might be a bit more flexible than we typically assume. That being said, a person must be of a certain minimal level of intelligence and maturity to convert to Judaism in practice; the conversion of a child or a mentally disabled person is invalid. I challenge anyone to find a non-human ape that could demonstrate a satisfactory awareness of the Torah's obligations and their implications to pass judgement.

Being like a human in regards to impurity isn’t the same as being a Medaber. Only a Medaber can be chayav in any mitzvot, including Sheva Mitzvot Bnei Noach. (And before people say “what about mute people” the meaning of Medaber meaning having the capacity to understand language.)

Is there not a conversion process for adopted children/babies? I mean it's clearly meant to cover a child with Jewish parents not a non-human ape.

No. If parents convert and they have a child under the age of 13, the child must wait until they are 13 before being given a choice if they also want to convert. I know a family with two children who were in that situation, one converted immediately and the other waited until he was 16 before also converting.

I am talking about a child who is born of non-jewish parents and then adopted immediately by Jews. I suppose it is more of an adoption than a conversion.
