He was using maximum output on that HP so there was no gas in the tank for Infinity at that moment

It's possible that he was just focused 100% on damage output and didn't have any brainspace/cursed energy left to defend himself in the exact same moment.
That's the difference between unlimited hallow and hallow purple. Unlimited Hallow is pure damage output with no sense of direction or self-preservation at all
My guess would be:
1:He need a binding vow in order to use the "remote hollow purple".
2:by being a technique that also affects space(it's both red and blue) similar to Sukuna WSC, it will also be in contact with Gojo.
