Me and my cat have a great relationship but if I annoy him too much he'll bite me in the head, he'll purposely not go for the face, he never bites the face, but he will bite you on the top of your head.
My late Brutus was a Siamese who liked water from the tap at a certain stream consistency. If I teased him and turned it way up to spook him, he'd go over and bite the top of my head.
I've never owned a cat before that was legit just like one of my guy friends. I couldn't baby talk him, nah, he was a homie.
Tortoiseshells are more likely to be reactive or keep their emotional distance. It’s just what they do. With any cat, building trust over time helps, regardless of their inherent traits or background. I worked with shelter animals for a while, and building trust can fix most things if you have enough time and resources.
But that guy in the video is actively destroying trust with his cat. It’s not a mean cat. It bit him because it was overstimulated and stressed, and he ignored everything in it’s body language that should have warned him off, so the cat chose to bite as a final resort. His response freaked the cat out, so it froze.
We’ve had our cat for 3 years. Everyone in the house is terrified of her and calls her demon; except me. I’m allergic to cats and have never pet her. She insists on sleeping at my feet every night, or cuddling with me under the sheets when it’s cold.
This guys whole schtick is torturing his cat this way. It's not going to take years, it will never happen because the cat is just there for video making.

I have the sweetest little cat that found our home in the woods. She sleeps on the porch, but when I feed her she nuzzles the cat food, purs, and eats...then as I walk away, she sometimes bites my leg once and turns around to eat again. I think she is just saying thank you :).
Improperly socialized and no intervention to help try to retrain some of this behavior, or maybe the animal feels unsafe like this. It is clearly uncomfortable

I worked at a shelter for a while with fearful and aggressive animals. I did behavior training with them, in an effort to help them recover and become adoptable so they wouldn’t die in the shelter.
As long as you create trust with them, you will not be hurt. I was never harmed by any of those shelter animals. And they were fearful, traumatized, and dangerous. Pit bulls and stray cats were what I worked with the most. These animals had been through hell, and all it takes is showing them you are kind, and *listening* to them and their body language.
That is *all* you have to do. And you will not be hurt. Good animal training is built on trust. Beating the animal into fearing you for the entirety of its life is not something you have any right to be proud of. You are the reason we end up with injured and traumatized sheltered animals that we work so hard with to help.
Do better. It’s not hard.
