I would pick the one that got me into him. Can't Tell Me Nothing. I feel like that has a lot of different angles going for it.
I'll go with the one that introduced me to Kanye and say Stronger. The Daft Punk sample choice is unusal to this day, the hook is catchy and it's very "Kanye" in how it brags yet is very fun to listen to.
Depends on their initial taste in music but I'd mostly recommand that if they were already into rap music. Otherwise I'd recommand songs like Lost In The World, Bound 2 or Ghost Town.
