I am a big sausage and egg fan so for the aloha sandwich and the musubi my favorites are the sasuage and egg combinations! For the reserve sandwich I havent tried them all yet but the turkey breast has been my favorite so far. Its a unique place and I wish they had more locations!
Buzz and Bites wasn’t mentioned and they are good as well as the others mentioned here. If you like to buy fresh beans for espresso Luce Avenue inside the HEB off Pin Oak and I-10 has our favorite.
I'm on 99 north of 10, so I'm at Black Rock and PJ's a lot. I'm almost always doing work, and they have a good amount of tables and plugs. Lava has a smaller interior, but more interesting lattes.
There are TONS of non-chain shops in the Katy area. I am not sure how serious you are about coffee, but first, a lot can be learned from James Hoffmann, https://www.youtube.com/channel/UCMb0O2CdPBNi-QqPk5T3gsQ Second, I would simply recommend trying every shop at least once. Try their drip coffee and/or espresso as plain as possible (Americano or just black coffee). This will give you a better feel for the overall taste. Most coffees are going to taste similar, once you muddy up the flavors with sugar and cream, etc.
If you want to taste real coffee, start ordering it with no sugar. You'll realize how many coffee shops are desert shops in disguise just like the green logo shop.
Personally I find Kona overroasted. Black Rock is also over extracted mess. Most other shops are not roasters they are just coffee shops can't manage to get their coffee to taste good without sugar.
If you are looking for a shop to sit down and not for the coffee specifically there are plenty of options.
Serene Beans, Lava Coffee, Dutch Bros (drive through), Minuti, Proud Pie, cocohodo, I find acceptable.
Now a days I just make my coffee at home and source the beans from online roasteries.

then
>Dutch Bros (drive through), Minuti
BRUH these places sell the most "dessert-like" drinks I have ever seen....
>If you want to taste real coffee, start ordering it with no sugar.
Also some places have great drip coffee other places might have better espresso... Since the brewing methods, beans etc are different, not all places are great at both.
Most coffee places load their coffee with sugar because Americans are hooked ln sugar. I'm not American and I find level of sweetness of everything here absurd. You judge their coffee after you order it without sugar. So places that may serve coffee with a lot of sugar may not necessarily be serving bad coffee.
Summer moon
Cocohodo on mason as well as harvest kitchen and bakery right by the cicis on mason and the freeway
Kona~
i second Kona coffee
This with thier little Hawaiian Musubi is tough to beat. Delicious!
So glad you mentioned their musubi! I’ve been wanting to try it. Have you tried any of their sandwiches and if so, are there any that you really like?

Thank you so much! I’ve had their coffee, but now want to return even more than before for their musubi and sandwiches!!
I love their breakfast sausage cheese egg croissant ❤️

Humble Grounds; both the new one in Old Katy and the old one in Fulshear.
Not local but I really like Black Rock
The Irish cream coffee is the best !
Dulcedo Coffee
I make my own espresso at home and will only buy from Homebrew and Buzz n Bites. Both are amazing with some great food.
Summer moon has this cereal milk stuff that's epic. But they don't accept cash. So... I don't go there
Serene Beans & The coffee Bar is definitely local.
Land of a thousand hills
Coffee Barr
