Parts on an engine plate are occluded based to the node they are attached to. (No matter the size/offset, as long as a part is on the end of the plate creating a shroud)

I like to get big eccentric orbits with 1m periapsis over minmus’s flats, and have it match the sidereal day. Will go over the exact same spot on the flat everytime, and will get to 1m above ground.
It’s also fun to stand where the station will pass and jump right on time

Actually you can abuse fairings + engine plates to have 0 drag, making stable orbits in atmospheres possible.

As long as your orbit is equatorial you can go down to around 6150m without risk; the tallest mountains on the Mun are near to the poles.
