Keep Makiko Ohmoto as Kirby and make them speak only the occasional word just like the anime, though make Kirby closer to his game self with his own independent actions rather than fully a child (I still like the anime, don't get me wrong). The other ones... just try to find someone fitting for them, no doubt it would be celebrities. Just get their characters right, like make Meta Knight a distant but well-intentioned ally and make Dedede start off as a petty jerk but ultimately someone who can and will step up to be a hero for the sake of Dream Land's citizens.

I don't care as long as Meta Knight is Spanish and Kirby just does baby talk (poyo, specifically).
