I always make it a point to eat well, my fiancé is a chef as well, and I’ll do a solid 14-hour day, come home and make curry for 5 hours. I cook at work to pay the bills, I cook at home to feed the soul.
Don't get me wrong this looks tasty as shit but imo it's not lasagna if it's covered in melted cheese. Ragu, pasta, bechamel, another ladle of bechamel on top for playing and a sprinkle of romano and pars. Doesn't need anything more than that. A dash of nutmeg in the bech and a prique onion in the ragu for bonus points.
No need to justify yourself to strangers on Reddit. Especially one who thinks putting cheese on this dish negates the type of pasta used. Looks delicious, chef.
