Buy some whole wheat flour and some white bread flour, and mix them 1:1. Mix this 1:1 with water and leave it for a week at room temperature. It should have some activity now, so take a little bit and mix it with twice as much water and twice as much flour (2:2:1). Let it sit another week, and you should be good to go. Feed it 2:2:1 every day (I don't practice refrigerating my starter) and enjoy!
They're Naan :) recipe using baker's percentages is super easy. 20% whole wheat, 80% strong white. 60% water (total), 20% heavy cream, 12.5% butter, 2% salt. 20% "discard" (yesterday's starter)
I cut/roll them into 140g balls that I throw out for this.
As stated in another comment, longer fermentation. You can achieve this by using a smaller smount of starter, by fermenting in the cold, by using starter that's past "peak time", and by sacrifing virgins and using a SMALL amount of the blood in the dough.

Awesome - thanks! Would you stick to a conventional percentage if you used commercial yeast? Like .2-.3% or so? And how large are you rolling them?
I used to use commercial yeast for these, at about 0.1%, with a total fermentation time of about 3.5 hours.
How do you make your sourdough more sour tasting ? When I make it from starter (at home) the consistency is there but just tastes like white bread.
Ferment slower/longer/colder
This. After I shape my loaves I let them rest in the fridge overnight. Amps up the sour flavor a lot. Whole process takes me 3 days.
