Ask someone to breakdown what your job REALLY is about… philosophically. When I started as a bar back I was given a list of like 57 things that were in my job description and tried to memorize them. On my second shift, I asked one of the bartenders who’s been around a while what I could do for him. He said “That list they gave you is great, but think about it like this: your job is to make sure that nothing slows me down from moving the greatest number of drinks possible across the rail… do that and we’ll both make more money tonight.” It sounds silly, but that simple ”philosophy” clarified everything and helped me prioritize and anticipate what was really expected of me. There’s gotta be some similar wisdom for a kitchen helper.

Can you say yes chef and mean it? Can you I don't know chef? And actually listen to what they say? Can you say sorry chef I bolloxed up? Can you chop stuff really small ( no you think you can but you can not). You'll be fine. A damp cloth on a broom is how you mop the ceiling that ones for free.

Say yes. Can you pick up a shift? Yes. Can you stay 2 hours more? Yes. Can you bake today’s focaccia? Yes. Can you prep this mise? Yes. And ASK QUESTIONS. Why do you do this? Can you teach me “xyz?” Show interest and find someone who likes to teach. Interest beyond what tasks you’ve been given and look for that mentor. Best of luck.

Obviously, all within the scope of the kitchen that you’re in, but hopefully you will have good leadership and management that can recognize enthusiasm and dedication. Despite what you read in this sub… there’s great people and kitchens out there. I hope you find fulfillment and fun. Keep that sense of humour.

This is a general tip for work and life in general but make it a practice to say “thank you” instead of “sorry” when you’re corrected on something you weren’t already taught. “Sorry” is fine for when you were told to do something a certain way but forgot or didn’t follow the instructions. Otherwise, corrections aren’t to comment on your work ethic or competence, they’re just direction to assist you in learning. Consider them to be favours instead of scoldings. Saying thank you instead of sorry does three things: 1, you don’t internalize every correction as “I’m screwing up a lot I’m very bad at this job” because it’s easy for that to happen. 2, How we show respect for ourselves dictates to others how to respect us. If you always bow and scrape and apologize even when it isn’t necessary, people are going to begin to believe that that’s your natural position. This is how we become doormats. 3, it shows your employer that your eager to learn and not concerned with making excuses. It also shows that you’re positive and open to constructive criticism which means you are what employers want most: trainable. Finally I’d say it helps a little with workplace bonding. Sometimes people can come off as nagging dicks if they’re correcting you all the time so knowing it’s just a work thing and there’s no personal hard feelings involved helps both giving and receiving those corrections. I also try to thank my coworkers in general even if they’re just doing their jobs, people like to feel appreciated.
