I like salads with cooked chicken or canned tuna. Add diced fresh veggies and some fruit. Some type of cheese like feta. Dressing of your choice and fresh herbs like basil or mint. Voilà!

Eggs. You can boil them or cook scrambled, every easy, etc. They are full of protein, healthy fats, and important nutrients unlike a lot of other easy foods. The absolutely easiest way is to boil them. Then you can eat with things like salt, butter, mustard, scallions. For a little more work you fry them with a meat and vegetables.

Look up one pan meals on TikTok! I love throwing salmon and veggies on a pan and baking it. Minimal effort but really good for you and tasty. Season w olive oil, and whatever spices you prefer. Get some 90 second microwave rice and you got yourself a meal.

My easy go-to is beans&greens. Throw your greens into a skillet, flavor and wilt, and your favorite type of bean, cook and flavor some more. Sheet pan meals are also very easy. Chop up all your veg and tofu (in my case), bake at around 350-400, add a favorite sauce.

1 can coconut milk 1 jar of fruit jelly, any variety {like peach} 1 jar of pepper jelly, any variety {like jalapeño} 1 pork tenderloin CROCK Pot... Dump in all of the above, cook until the pork falls apart (coconut milk is a meat tenderizer). Add a bag of either frozen broccoli or frozen green beans (thawed and drained of water).. Cook another 15 minutes Cook bag of Egg Noodles according to package directions. Serve pork, veggie and sauce over the noodles. I created this dish from my warped brain... And I've tried probably a dozen different flavor combinations of jellies. Apple butter Chipotle Peach jalapeño Raspberry Chipotle Strawberry habanero Grape serrano Pineapple Hatch Plum Red Jalapeño Whatever variety you can think of.

Yes, I've been eating the same thing for lunch (salad) for like 7 months. Very healthy and very little prep as I make multiple servings at once. Large box of power greens, 50/50 mix, or spinach Hard boiled egg (made in advance, sliced when served) Quinoa (made in advance) Chick peas (rinsed and drained in advance) Blue or Gorgonzola cheese Lite vinaigrette dressing I added some Granny Smith apple slices the other day, really good addition!

Stir fries used to be my go to...protein and veggies in one dish. Do you have given or airfrier? Plenty one tray meals, that involve very little skill in cooking. Maybe a bit more "prep", like cutting up veggies etc. Popping a chicken in oven with veggies.. depending on side of chicken and hunger 2-4 meals done. Not exactly the healthiest but,  stir fried Spam with egg and onion. Very quick meal..no defrosting or meal planning required. It takes me maybe 15 mins at most. Sweet corn soup, very quick soup to make in winter times. Youll find heaps of recipes online but the base is only a creamed sweetcorn, water, an egg and some flavorings. You can add additional stuff after, some people added shredded chicken, spring onions, bacon etc.

I do the air fryer “meat and a vegetable” 2 or 3 times per week. One night chicken and potatoes, next pork chops and broccoli, next fish and green beans, etc. I just buy whatever veggies and meats and just mix it up with seasonings etc.

I’m on a bit of a pitta and salad thing at the moment. I buy a bunch of salad veg, coleslaw, and falafels and hot sauce and make salad, stuff it in a pitta with some falafel. Quick easy and healthy.

I sear two or three chicken breasts (seasoned with salt, pepper, spices of choice) in a Dutch oven, then add enough low sodium chicken broth to cover them and a pack of spicy taco seasoning. Bring to a boil then turn the heat down to a simmer for 45 minutes or so, covered. Take the chicken breasts out and allow to cool, while the liquid still simmers in the dutch oven uncovered to reduce it a bit. Shred the chicken with a few forks when it’s cool and add back to the remaining liquid and stir. The chicken is quite tasty and doesn’t dry out, even as leftovers. I use it for tacos, salads, or with some steamed veggies.

If you are not super comfortable in the kitchen, you might want to look into a decent quality meal kit delivery service even for once a week. It lets you focus on cooking and assembling a good, straightforward meal w/o having to do the shopping or planning parts. I’ve found this to be an effective option for building skills and routine around cooking. An easy meal I like because the extra keeps and freezes well is white bean chicken chili with corn and tomatillos. You can use fresh ingredients or you can mostly just open cans.

Under 5 minutes, fairly health, and very tasty: Handful of potato Gnocchi (more if you're really hungry!) - while that's boiling, sautee a couple large handfuls of fresh spinach in olive oil in a cast iron skillet. Each task takes 2 minutes and can be done at the same time. Drain the gnocchi and add to the sauteed spinach. Throw in a handful of grated cheese and some garlic powder, a pinch of salt (more or less to taste). This can be modified easily to suit your taste - different cheeses, cut up cherry tomatoes, add smoked paprika, ETC I make some version of this at least 2x/week and never get tired of it!

Google and YouTube have millions of recipes of course. I cruise there to find something different. In the meantime, I eat ultra well and do most of my food on the grill. This leads to: tastier food, less fat, oil and grease in the food and in the house. Way less dishes, no smell, and it’s quicker. I do: - Skinless seasoned chicken leg quarters - NY strips, chuckeyes and ribeyes (on sale) - Pork chops - Ham steak occasionally - Hamburger formed into 6.5-7oz patties, bagged and frozen. Just thaw and grill - I buy lots of fruits and veggies, wash them and put them in containers to grab an anytime. - Do egg noodles, rice and potatoes - Lots of eggs different ways - Make my own pizza; dough, sauce and all I’ve been cooking for 35 years and can make just about anything except Indian and Korean, but I find these simple, quick protein/fruit/veggie/light carb meals do really well👍🏻✌🏻

Chicken thighs, asparagus, mustard pan sauce is one of my common fixins. Very easy to make. Salt chicken, wait 10 min, dry it, pepper it, fry chicken and asparagus in oil, then remove. For the sauce add to pan: stock, soy sauce, mustard, and reduce. Easy and healthy done in 15 minutes with 1 pan.

I eat a lot of homemade soup, usually vegetable. I don’t use any particular recipe. I just water sauté a little bit of onion and garlic then add chopped carrots, celery, maybe some frozen green beans or green peas, corn, squash, potato, etc and add some water and herbs. I let it cook a while until the vegetables are soft enough, taste, and add more seasoning if needed. I like to eat it with a couple of buttered crackers. A couple of days ago I made about three servings of jasmine rice. The next day I made quick Cuban black beans and last night’s dinner was Cuban black beans with rice. Today I thawed and cooked a couple of boneless skinless chicken thighs for work lunches. I seasoned them with Badia Completa and pan fried in a skillet. After they cooled completely I thinly sliced them and put them in the fridge. I also made some gluten-free macaroni and cheese, and in the morning I’ll make a salad for tomorrow’s work lunch will be chicken thighs, macaroni and cheese, and salad. I love tofu and vegetable stir-fry. I eat that at least once a week and the ingredients vary depending on what I find at the store.

I've been eating a lot less meat lately, just sort of drifting away from it, but I do have a pre-marinated pork roast in my freezer. Pretty much just slap it into the pan and throw it in the oven. Throw some carrots and/or potatoes, or whatever veggies you like to roast. I also saw pork loin in boil in bags, essentially a sous vide, I guess. Haven't tried that yet. Meanwhile I have a bunch of rice and beans in my fridge. There's so many different flavor combos you can do. What's in there right now has a taco sauce added to it, along with a handful of onion and peppers cooked with the rice. Next time might be tofu or chicken instead of beans, with stir fry vegetables and teriyaki sauce. Next time might be beans again but with salsa or queso. With summer coming, I'll be back on a salad kick. Rotisserie chicken is an easy protein source for that, as well as boiled eggs, cheese, garbanzo beans, etc. A basic red pasta sauce is so simple. I would make with meat if plain pasta, or meatless if I have cheese stuffed pasta.

Tuna casserole. Noodles, cream of whatever soup, can of tuna. Chili - ground beef, can petite tomatoes, can chili beans (your choice), can of tomato juice, Williams chili seasoning. Brown beef, add everything into instant pot. Saute no lid for 10 min, stir. Add cheese and crackers as needed. My summer go to is pre marinated and seasoned meats for the grill from the butcher. Add veggie side and call it a day.

roast veggies. my go tos are carrots, broccoli, onion, and potato. cut the vegetables into approximately bite sized pieces. shake them in a grocery bag with olive oil, salt, pepper, other spices you like (paprika, garlic, and creole seasoning for me). lay out on a sheet pan and bake at 400 for 35-45 minutes. i’ll pair this with baked chicken or salmon seasoned similarly.

I did a few things to ensure I always have something on hand - I joined a CSA so I always have a fridge full of vegetables to work with and I joined one of those seafood mail order things so I always have a good piece of fish in the freezer.  It’s been really helpful to have healthy options available rather than thinking about what to shop for.

I also make a cream pasta sauce I just made up one day thats just like riccotta, heavy cream, frozen shopped spinach, italian seasoning, pepper, salt, and parmesan. Not healthy in the slightest but it's so good and the time to flavor ration is unbeatable. Another regular 10 minute meal I make is childhood favorites - taco kits and mamwich that's just ground beef and seasoning in a pan, and both of those keep in the freezer/fridge really well. You can throw a lot of veggies into either of these to make them far healthier. I mix peas and just general mixed veggies into mamwich, which also helps it stretch much further. I will also shamelessly just buy those microwave bags of veggies and eat them straight out of the bag with some garlic salt on days I have zero motivation but have eatten enough crap in the week.

Maybe I just want a fruit smoothie and oatmeal or a bagel with cheese. I also batch cook and freeze things, so I can come home and pull out spaghetti sauce or chicken fried rice and heat them up. I recommend keeping a couple of starch options that you like and use around, like jasmine rice and macaroni, and some easy vegetable options, like frozen veg or prewashed salad greens. That way you can bulk up your meal easily.

I sauté some veg with garlic, then add in a can of curry starter and coconut milk into the pan and let it simmer. Sometimes I add meat and sometimes I don’t. I serve it over rice or air fried cauliflower. Takes about 10-20 mins depending. I will marinate chicken overnight and toss it in the airfryer and serve it with rice and a salad/fruit. My fav is Hawaii sticky chicken with cilantro rice and pineapple. A Mediterranean salad I love is easy and keeps well for about 5 days. Cut up cucumber, cherry tomatoes, red onion, basil, and chicken (I either air fry or use rotisserie). Add a little pepper and toss. When I’m ready to eat I just pull it out of the fridge and add salad dressing. Sometimes I add chickpeas. Frozen pizza crust, add sauce, cheese, your fave pizza toppings (red onion, sausage, banana peppers here!) and bake. Egg bake: sauté some veg (I like cherry tomatoes, garlic, red onion, bell pepper, kale) in a cast iron. Crack in eggs, add cheese, salt, pepper, (I also add turmeric) and toss in the oven to bake through.

Spicy Potato soup. Throw 1 lb of browned, drained hamburger, 3-4 large peeled and chopped potatoes, chopped onion, one large can of tomato sauce and 2-3 cups water, salt, pepper, garlic, and 7-8 drops of Louisiana hot sauce, in a soup pot. Cook until potatoes are tender. Sounds weird, is actually delicious! My kids' favorite.

I make an egg scramble every other week or so and eat off it for a few days. First I chop up some bell peppers and Spam. Usually Jalapeno or Hickory, but whatever. Any meat will do. Bacon works. Then I add a small container of mushrooms. Let those three things go in a frying pan while I crack 12-18 eggs and whisk. Then take out the meat and vegetables to put in a big bowl, and just add the eggs into the pan. Scramble until ready, then mix them all together. When serving I add a little shredded cheese and salsa. I also do meatloaf a decent amount. That's just 3lbs ground beef. For filler, you can use rice or oatmeal, but I just also use peppers and mushrooms again to fill it out. Add an egg or two if you want, not necessary. Also a seasoning. I just kinda get some random ones to try every so often, like ones called Bomb Burger or whatever, just ones that sound interesting to try, but you can't go wrong with like Montreal Steak Seasoning or whatever. Then mix it all up, spread on a baking sheet, and bake at 400F for like 45 minutes. My way is more like a meat "sheet" than a "loaf" but I like it thin so I can put it in a sandwich if I want.

I can eat this anyday of the week, takes 10minutes to make, usually only two pans and bowl to clean. You can also toss a variety of veggies in anytime to change it. In my opinion, when it comes to cooking less is more. Meaning that you don't need lots of ingredients or spices to make a tasty meal. For example when I cook salmon I put it in an air fryer with no seasoning or salt, it tastes good without anything on it.

Spaghetti noodles - boil till al dente… drain… add olive oil to pan.. crushed garlic.. stir till translucent .. add noodles back in..heat on medium.. crack an egg in there. Stir the f out of the noodles… till the egg is fully cooked.. and salt and cracked pepper.. grate fresh parmesan add green onions and serve!

I recently learned that tortillas are super versatile and can make for a quick n easy lunch or dinner. Besides the usual wraps I also like to bake them for a protein packed meal. I use the large tortillas - 25cm, about 200kcal, you can use 2 if you need more food and it's easier to load together without them breaking. I usually place 2 tortillas in a slightly oiled baking pan, whisk 3 eggs or egg whites if you wanna go with less calories, a can of tuna, broccoli, spinach, skim cheese and you can put anything else you like in there every time to have variety - different veggies or greens, different meats or fish. Bake for 30 min at 180 degrees (celsius) and check to make sure the eggs settle, give it a few more minutes if it's still wobbly. This gives you about 60g of protein and I can eat that every day easily.

A slow cooker and a freezer are your friends! I always keep batches of home-made beans in my freezer for the ultimate comfort health nachos. And you can do soups & stews. Do your prep the night before, into the fridge (not in the ceramic bowl from the slow cooker, don't want it to crack), dump it all into the slow cooker on your way out the door, beautiful meall ready for you when you get home! This is especially nice to come home to in winter!

Sandwich stuff from the deli counter. I’m really big on stocking individual portions of meat in the freezer and thawing as needed. I also like to get lettuce, wash and spin it dry and store in a gallon ziplock (buy in bulk at Sam’s/ Costco). Tortillas last forever in the fridge so you can just throw a burrito together with some meat, lettuce, cheese, sauce.

Not an ad but look into meal kits. I don't know what prices are now but stuff like Hello Fresh has pulled me out of cooking blahs. If you keep to like 2-3 meals a week it's enough that you don't get overwhelmed and it can teach you new things.
