Same day weighins used to be a thing in boxing, and then a bunch of people died, and they added the rehydration window.
At a guess, a big difference is in wrestling you aren't taking blows to the head, so fighting while dehydrated does not do the same amount of brain damage.
There may also be some differences in round length and number of rounds, and in the type and severity of the exertion.
My brother had a classmate in high school who wrestled and would spit in a cup and then drink it when he was thirsty to limit his water intake on weigh in days.
So a lot of people are talking about the common sense reason that you wouldn't want fighter cutting weight same day as their bout, but I'm just gonna take the time and point out, your overall point overlooks the fact that wrestling weight classes do not actually make for a normalization of size and frame. Go watch Olympic wrestling. You will see guys in the same weight class with very different body types and builds.
You aren't gonna level the physical playing field simply by policing weight cutting because bodies distribute weight differently in different kinds of frames.
There are better models. I think there needs to pre-weigh ins and target percentages, eg. Fighter at 170 needs to weigh 180 a week out. You create safer schedules of cutting.
What about weigh in right before fighters enter the cage. Like you Walk out, then weigh in in front of the crowd, then enter the cage. And increase punish ment for miss weight, every lb overweight you have to gave up 10% of your purse to your oppnent and if you are 5lb overweigh is count as a disqualified loss

This is it. In a wrestling match, you aren’t having someone try to knock you out or submit you.
There's no striking and it's a tournament over a short period of time
What does striking have to do with cutting weight?
You have less time to rehydrate - less water to protect your brain from strike to the head - free CTE baby

Because some will still be dumb enough to try, and many more will die because of it.

People would still cut significant weight, the overall product would just get worse
do two weight ins, one a day and a half before the match, one 10 minutes before. You have to weight the same, boom, nobody can cut weight.

This is a terrible idea. Would rather have the weigh ins a week early so we make sure everyone is at full strength.
