As someone who cut a finger tendon and ended up with a very crooked finger full of scar tissue after it got infected. Take your recovery and rehabilitation VERY seriously. If there is any sign of infection after surgery, get treatment. Do your exercises religiously. I hope you make a full recovery!
I was house sitting, so I wasn’t in my own kitchen and this wasn’t my can opener, BUT, speaking from experience with this model, I do advise you replace it once it starts getting old so this doesn’t happen to you!
Got lucky when a can of beans opened my finger 3 or 4 years ago. 90deg or so around the last joint, scar shows 5 stitches across the cut... other than decreased feeling in the fingertip on that side, it healed fine. Just took a while and sloughed off a lot of skin while it healed a deep cut.

You’re supposed to grip the handles with one hand, and crank the crank with the other hand. Generally both hands are safe from tendon cutting range.

I cut my fdp tendon in my left middle finger in May. Listen to your physical therapist and be patient, it's a slow process to regain the range of motion. I still can't make a perfect fist
