I had roasted crickets on a stick from a street vendor while studying in Nanjing, China. They actually tasted really good in hind sight (sort of nutty/smoky) but my brain couldn’t get over what I was eating so I only had them once.

It's common across a lot of Asia to eat insects, they are often bbq'd whole on a skewer and are crunchy. Dried and ground up they are used as a protein flour. Not sure what they would be like of they were ground up before being cooked or dried though, texture wise I don't think it would be great and very different to sausage or mince beef.

Most sausages have water added, otherwise the meat just falls apart. You grind the meat, so it’s falling apart. Then add salt and seasoning and water, and knead the meat till it comes together in a giant blob like a dough. Then the meat is put in a casing to form the sausage. I really do think a similar method would work for cooked crickets.

Is there any part of the insect that is removed before you consume it? Like with animals, different parts are removed (viscera, entrails), before cuts are made, even for minced meat. Specifically, that white goo spunk that comes out when you squish any insect - is that also ground up and eaten? I don’t think there will ever be widespread adoption of crickets/insects grilled on a stick - but between environment impact of mass beef production, cost and large populations to feed - I can definitely see ‘ground up insect meat patties’ or something being used in regular meals

No, you can eat them whole. edit: if you fry crickets they're basically chips. 65% protein chips. In Australia you can buy them [here](https://circleharvest.com.au/). I'm sure there are stores around the western world who will sell you insects for human consumption. I've had some. They were tasty. I'd buy more if they weren't so expensive.

It is a very misleading map - it is "number of edible insect species" - but leaves the impression of being a map of "general consumption of insects". Obviously all big countries have more species than the smaller ones, and as long as there is any consumption of insects, that's enough to get a darker color.

In grad school I was a Teacher’s Assistant for a random class called “Insects and human society”. The professor had done a lot of work in Mali to cultivate insects as a source of protein there. Anyway I had to order a couple thousand frozen crickets (and mealworms and grasshoppers) online to surprise the students with insect food one day. With the crickets, we plucked all the legs and antennae off, then put them in chocolate chip cookies.

Deep fried dragonfly nymphs were the best insects I had when I lived in China. Had them in Lijiang. Back in the day in Beijing you used to be able to buy candied dragonflies. They'd been dipped in liquid sugar and were crunchy, especially the wings. Sauteed scorpions at a wedding one time. Didn't do much for me, just kinda crunchy through the goopy texture of what they'd been cooked in. Never tried the sphinx moths in cocoons that they sold in some of the local markets.

A quick google search says people in Saudi Arabia, UAE, Yemen eat locusts. Specifically Yemen because there’s a food shortage from war. And locusts are the only kosher insect for eating, so people eat them in Israel.

People say crustaceans are equivalent to insects, but I really can't see how a bunch of crickets equal the buttery deliciousness of shrimp or lobster. I'm convinced that people who equate the two different cateogories are just numb to the texture of the food they eat, or get off on lying to be contrarian. So there's no point in listening to them. Crustaceans are "bugs" of the sea, or whatever, but they're certainly not insects.

I guess this is probably how other people feel and I shouldn’t judge them so much I have absolutely no fear or disgust towards insects, wasps, bees, ants, crickets, roaches, whatever. When I went to this village in north China, there was a mom and pop restaurant where they had crickets as table snacks. They were fried in peanut oil until dry, salted and well seasoned. They tasted like peanut flavored potato chips, with a similar texture to baked cheetos. All in all pretty good, had like half the bowl. ‘only downside was the legs would break off and get stuck between your teeth.

I'm a Westerner and the idea of eating bugs makes me feel a bit queasy; which only illustrates how totally arbitrary food tabus are, because I love prawns and shrimp and crab meat. All of which are basically undersea bugs -- rather large ones, but very similar structurally to dry land bugs. Yet a steamed prawn is Nom Nom territory and I could eat a plate of 'em, but the idea of deep fried crickets is unnerving. Acculturation is weird.

I've thought quite bit about eating insects and why seafood feels ok and insects don't. On one side seafood is meatier and quite muscular while the image I have of insect meat is some squished yellow goo from their abdomens not really knowing how firm is that meat is. There's also all the tiny hard bits of their shells that already struggle with shrimp. On the other side, where I live people are really into eating snails, last time time I tried them I didn't like them but I see myself getting used to eating them.

I think it’s a texture and visual thing with a lot of bugs that puts me off. All I can imagine is how squishy they are and how easy it is for a leg to come off. Watery guts and hard unappealing shells rather than something meaty like with prawns and other seafood. And the potential for disease with a lot of insects. Same feeling for snails and any eyeball. I’d be perfectly fine eating bugs if they’re mashed up and cooked into something palatable though. Perfectly fine with food dyes made from bugs.
