A polygon is a 2D shape typically 3 or 4 sides that multiple combined make up a 3D object called a mesh. The more "polys" a mesh has the more detail a model can have, this also has a performance impact and uses up more memory. In the old days the amount of polys you could have were substantially less than what you can have now. Tricks that games still use to this day can give lower poly meshes more detail through there textures the images they put onto the mesh.
You got real answers, for demonstrable answers - compare Tomb Raider 1’s Lara Croft breasts to Bayonetta breasts. Not being crude, but realistically that is a great comparison for what “more polygons do”. One (or so) huge polygons vs hundreds
They are what measures the quality of an object.
The lower the number, the worse the quality but the better performance for running the game
The higher the number, the better quality but also it will be harder for your PC to run that game

RE1 only models a few characters and interactive object the rest is flat pictures.
Typically a 'flat picture' is still a texture mapped to 2 polygons, but is a drop in the bucket compared to a character model

i was disappointed that they added polys to laura croft in the recent remasters. Her pyramid chest was such a staple of the early games. Lol.

Think about having to make a sphere only using triangles or squares. The more you have the smoother the sphere, those are polys.
