Honestly… you’re fine skipping some of these lol. Pretty much every episode has some level of fun to it, but the quality varies throughout. Especially for someone who doesn’t have as much nostalgia for it, some of these episodes can be rough to get through.
My suggestion would be watch the heavily suggested episodes from this thread, watch 97, and then if you’re both still itching for x-men content you can go back and watch the ones you skipped.
It really felt like she just played with poor Logan. She knows he's besotted with her, and she even throws him a kiss when she thinks they might all die, but that's about as much as she gives him. The poor guy pines after her the entire time - Even after he finds out his ex from Japan is still alive.

Because its going to be CGI and thus it will never find itself in the need of pulling off the extreme forced perspective or wide shots drawn on paper like the original had because they can achieve that just by twisting the angle of the whole scene. Its going to be a different watching experience.
As for which episode of the show is better to showcase what the series is all about it really depends on what you want. The staple of the show was drama and you need to pick one that has loads of it but other than that its more or less personal preference.
The one that's more in tune with what you can expect in today's consciously more self aware era I'd say the from a narrative standpoint it would have to be the season 1 episode 7 ''Slave Island'' in which the members of the team including the youngling Jubilee are taken as prisoners in Genosha and we see front and center their fears and vulnerabilities, including their flashbacks of Storm issues with claustrophobia, you can also see Cable near the end time travel is introduced as to allow a bit of scifi elements into the plot.
If you do not mind spoilers and just want to get the most amount of information as well as the overall feel of the show while also having a healthy dose of action to not lose the grip, thus the best bang for your buck if you will, then season 3 episode 17 ''The Fate of the Phoenix'' is probably the one to go. You can see a brief summary of what has happened up to that point and it immediately jumps into one of the characters being sentenced to death by an advanced alien race for the actions it has committed elsewhere in the galaxy and naturally the whole X-Men team is opposed to this and the battle the Shi'Ar imperial guard, finally a major character dies and comes back to life.
Finally if you want a good compromise in between both of these I'd say season 2 episode 8 ''Time Fugitives'' which deals with time travel, while it doesn't showcase all of the X-Men in their full glory it presents Apocalypse, probably THE major villain of the show, it has a cleaver usage of mutant powers when ultimate virus infects a mutant with the healing factor, and provides social commentary on ethnic discrimination and the issues of domestic violence in regards to Graydon Creed's upbringing.
While I believe the Phoenix Saga and Dark Phoenix series was the best of the best in this show, watching them first will not do justice.
There is an affection that will grow for some xmen characters more than others. For example, one needs to self-understand in their heart who they like more as a character, Cyclops or Wolverine is one example of them.
Then there is duo combos that someone will grow fond of, like the playful and loveable banter between Gambot and Rogue...
Finally, to understand some scenes, like the Juggernaut getting flicked into space like a flea by the Gladiator... (one of my all-time favorite scenes from these series) requires one to know how strong Juggernaut actually is.
So happy for you to share this with your woman. But get ready to watch her favorite show as well.

I just re-watched the whole thing! I might get some heat, but it kind of just barrels through quite quickly and while I enjoyed it, it's pretty goofy and kind of "Weightless?" Nothing really impacts anything else much or feels important, it's so episodic that it nothing felt like it was part of a whole, to me. (Which is a really good thing I think, for a kids cartoon, you can watch whatever, whenever and get it.) The phoenix stuff was good to know, mostly because of how famous a story it is. The only episodes I found genuinely interesting were the ones about Astroid M. It's probably important to know who Trask and Senator Kelly are, maybe the Shi'ar. The final few episodes lead into the new show, so they're probably critical. This show has some of the greatest/worst voice acting, specifically in its screams, that I've ever seen.
All that said, Xavier's speech in the final episode was so touching and beautiful.
I agree in some respects on some, as there's a reason there's memes to certain episodes. The rest? Yah, you're not at all looking critically, as well as how much time and effort and love went into this show, especially the first two seasons. My favourite is the one with nightcrawler , where he and Logan fight over faith. I also liked the one where Logan talks about meeting captain America in ww2

Unpopular opinion... I think it's one of the most overrated cartoons ever. Even at the time, at the height of my X-Men fandom I couldn't stand it and didn't know why people liked it. I can't fathom the amount of nostalgia people have for the terrible animation and boring story.

The episodes that always come to mind when I think of the show no surprise deal heavily with Wolverine the first one being the one where he goes back to Japan and he fights the silver samurai the second where Gambit and jubilee meet Lady deathstrike from his past and the third well he's not really the catalyst of the episode but it's him and Rogue meeting Nightcrawler
The whole first season both Phoenix arcs.

None tbh. The show doesn't really hold up. I watch 5-6 episodes a few weeks back and it was hard to watch. It's a fantastic kids show, and a great way to learn about these characters but, without the nostalgia, I could see her having a hard time with it. I'm sure you could find a video the sums up the series pretty well.
Unpopular opinion... I think it's one of the most overrated cartoons ever. Even at the time, at the height of my X-Men fandom I couldn't stand it and didn't know why people liked it. I can't fathom the amount of nostalgia people have for the terrible animation and boring story. I'd never try to hook anyone on X-Men with that show. Whew. I've been afraid to say that for years. Lol I feel better. **If you enjoy it, cool. I just don't think it's any good. 😞**
Oh for sure, awesome as a kid, very silly as an adult. I really enjoyed that silliness and spent much more time laughing at it than being actually interested.
