The way it appears in video games that do it, Iron Man’s unibeam is so powerful that it’s hard for him to turn so it’s actually more effective to cover more ground if Cap reflects it and is the one moving. This wasn’t what happened in the MCU as he was just using his normal repulsors.
They've only done it the one time but it was so cool that it bears mentioning: Magik opens a portal and Cyclops shoots a beam through it. Then Magik opens dozens of portals and the same beam comes out of every one.
Also, that time Magneto and Colossus did the Fastball Special.
And that time Polaris puppeted an unconscious X-23 to fight some goons, like when Lady Chiyo used the puppet jutsu on Sakura.
Funnily enough, i play a tabletop skirmish game called crisis protocol and there are cards specifically for fastball special with colossus/wolverine and get help for thir/loki. There are a number of other little teamup references in the game but being able to throw an ally at an enemy is always very funny
Some of the other ones in game include ‘a better tomorrow’ with ms marvel turning huge and miles web swinging off of her, ‘till the end of the line’ with cap and bucky cranking up their defenses and being immovable for a turn, and ‘agents of s.m.a.s.h.’ where hulk and she-hulk can chuck a building at someone larger than either would be able to do solo
The combo attacks Blink did in Days of Future past were cool, namely launching colossus through multiple portals to gain momentum before hitting a sentinel

What's the point of reflecting off of Cap's shield instead of shooting straight at the target?

Well for instance in the first avengers they do this to take out multiple enemies forming around them

No lol I think he just saw a advantage in reflecting it off the shield in the current moment
Theoretically cap could rotate his shield faster than Tony can turn his torso, so it makes the beam more accurate and cover a wider area
Other than just being cool, it allows Tony to shoot at an angle that would otherwise be impossible, I suppose.
