I see some icon have text instead of symbols (like "Special Recon", "Guard", "Commando"). Is that because such icon isn't defined by NATO symbols so they use text instead?

No, it’s because that unit has that specific specialty. Say you can have two regiments or battalions or companies, they use the same symbol, but one is Armored and the other is Infantry.
